How can I change the Save as PDF view?

Whenever I save a website page on Safari, or an e-mail or a document as a PDF file,  I click File, Print and then PDF when the print page comes up.  I then click Save as PDF which brings up what appears to be a Finder window.  The problem is all my files and folders in each column are there alphabetically with files and folders mixed together.  I have a lot of folders and files and I have to scroll all the way to the bottom sometimes to find the folder I want.  How can I change this view so all the folders are at the top alphabetically with the files below?  The normal Finder window comes up with each column having the folders at the top with PDF documents together below and regular documents together below that.  Any help would be appreciated.

    But how about not forcing me to put the pictures in a pre-named folder and have me select where I want them to be saved? It's very tedious to have to move graphic files manually upon every change and re-save...
    Is there an option to disable the "create folder" option like there used to be until CS5.5?

    Well, that's just the option I wished for - but only Adobe know why they decided to remove this menu item in CS 6... Pay your dues and upgrade for a lot of money to the newest version - and be punished for it.

    I scanned a 50-page document with an HP 5610xi All-In-One using the software that comes with it: HP Scan Pro. Though the physical document has standard 8.5" x 11" pages, the PDF resulting from scanning has page size set to 35.42 × 48.67 inches (according to Preview's "Tools > Inspector". I want to resize the pages to 8.5" x 11". Shouldn't Preview be able to do that with "Tools > Adjust Size..."? When I try, the menu option is grey so I can't select it.
    I'm using Preview Version 4.2.

    Thanks for the insight; that explains why it's the wrong size. I selected 300dpi scanning (which is the default, actually), but HP Scan Pro evidently created a PDF with 72dpi indicated. I want it fixed because I want to distribute the file to other people and have them able to print or display it without problems.
    I still don't know why Preview won't let me change it, but your question about whether I wanted to print it did lead me to find a workaround: "File > Print" and "Save as PDF..." saved it with the correct page size.

    To change the screenshot capture location to a new place on your Mac, first think of a location that would serve you properly. We like to place ours in a "Screenshot" folder located inside of the User's "Pictures" folder. To change the location to this new location, open the Terminal and enter the following command:
    defaults write com.apple.screencapture location /Users/[u]/Pictures/Screenshots/
    Replace "[u]" with the name of the user on your system. Once you have entered this command, let's restart the screen capture utility by restarting the SystemUIServer by entering the following command:
    killall SystemUIServer
    You can optionally log out and back in instead of entering this second command, thus restarting the SystemUIServer. Once restarted, all screen captures taken from here on out will end up in your /Pictures/Screenshots/ folder in the User's home folder on your Mac.

    For sideloaded content the nook pulls the metadata from ePub file itself.  I would suggest looking at a program like Sigil or Calibre that will let you edit the metadata in the book to make it appear like you want.
    For the PDF vs ePub - No, that's the way PDFs work (think of them as graphics, not text), wheres ePubs are Web Pages - so  no you can't them to behave exactly alike without converting the files.

    I think there may be more to this question than you say.
    If your PDF page is say, 8 x 12 inches, and you found a way to scale it to 25%, changing it to 2 x 3 inch, shrinking everything on the page to quarter size - wouldn't it look exactly the same on the iPhone? It's just going to be the same as zooming.
    Or were you hoping for something more like in Word, where changing the page size keeps everything the same size and spreads it over more pages? That isn't something you can do.

    but that didn't do it. When I used 'Open with', then 'Choose default

    @Renzo – in Acrobat Pro you have an option to format the form fields.
    Under the tab "Appearance" there is "Text" with "Font Size:", "Font:" and "Text Color:".

    the popup box that appears when I click Download on the preview page changed. The pulldown menu that appears next to "Open with" used to have 3 entries:

    Now it has only 2:
    # Okular (Default)
    # Other
    I'd like it to read
    # Okular (Default)
    # Acroread
    # Other
    How can I control the entries in this pulldown list?
    Also, how can I make the default choice in the popup box be
