Is the screen-rotation lock on? If it is then there is a padlock shown in the upper right by the battery icon. To turn off double click the Home button and fully swipe the bottom row fully right past the music controls and tap the padlock.

- Reset all settings

- Restore from backup
- Restore to factory settings/new iPod.

Not sure what your question is. You need to click on your phone in the lefthand column. Then you should see tabs across the top in iTunes. The second tab is "Info". Click on it.

This is done through iTunes on a computer. You plug it in and under the Summary tab, you can chose what type of video quality you prefer.
You'll choose "Prefer Standard Definition Videos" from the bottom half of the Summary page
