To not see photos I have to switch istream off? how can I remove the photo?

You can't remove individual photos from Photostream.

If you mean delete those from taking space in backup, you can turn off camera roll backup.

Try holding down the Command key and dragging the file well off the sidebar.

The only way photos are stored in icloud is in a backup from an ios device. This assumes that icloud backup was turned on and that camera roll was turned on. Note that photo stream is a slightly different service that is used to sync photos from one device to another, it's not really a storage service.
To retrieve photos that are in a backup, you need to reset a device (wipe all data from it) and perform a restore. Note that many users have had problems getting their photos back from a backup - for one reason or another. Remember, the suggested way of storing photos is to sync them to a computer or service like Dropbox.

if sync'd from itunes then unsync
click device name in itunes- click photos- uncheck what you want to remove- apply or sync at bottom

I guess like everyone else I've been messing around with photo stream and adding random pictures to test it out. But I'd like to be able to remove images from photo stream too but for thre life in me I can't find a way to do it. Doe's anyone have any idea/tips? Or has Apple just made a big mistake??

Check Pictures>Photo Stream>My Photo Stream. Note: when you turn it on you will only see photos from the last 30 days as photo stream photos only remain in iCloud for 30 days. If you want to stream older photos to your PC, create a shared photo stream containg the photos and invite yourself as a subscriber (see http://help.apple.com/icloud/#mmc0cd7e99).
