If you are using your main account for iTunes, you should continue to do so, otherwise you will lose access to many of your purchased items made that account.
You can delete the AOL account for iCloud only on your iPhone and first iPad, by going to settings > iCloud, scrolling down and hitting delete account button. You will then enter your me account details into the iCloud settings.
When you delete your AOL account from the iCloud settings, the phone should give you the option of keeping your data on the phone, you need to make sure that you choose this option, and also choose the option to merge when you add your new account back.

I've been through the exact same thing and cannot seem to get an answer here. When you go to Manage Storage, does it have something at the top like "19.1 GB of 25 GB available"? I only have a Mail account with 5.3 GB in it and a Backups account with 553 MB in it. Obviously, these don't add up to 19.1 GB. There was no change in any of these numbers when I deleted all the same files you mention. With the free Mobile Me storage expiring next month, this is something I'm pretty concerned about.

If it's the photo you used in contacts you change it there. Tap edit, then tap edit under your photo.

You are attempting to download the picture to your computer not uploading photo to the website if I am understanding you correctly.

Apps will always be tied to the account from which they were purchased.
If they were purchased from your husbands account, then they will have to update using that account.

I've spent over 3 hours on the phone/chatting to online support and none of it seemed to help as it all revolved around resetting emails etc but can't do any of it without my access to my old email. Now my phone won't take cloud because they advised to set up new apple ID and use that, but can't sign out of old one completely. I've been without MSWord for a long while, so all my word processing docs have been written in TextEdit, the stock mini-word processor that comes with OSX. Now I have MSWord and I no longer need TextEdit. Even more importantly, I'd like Word to automatically open when I click on a doc created in TextEdit. Adding ".doc" at the end doesn't do it. It's still refers to TextEdit to open the document.
Any advice?

Select a document of that type in the Finder, choose Get Info from the File menu, change the application under Open With, click on Change All, and confirm your action.
