How do I get the Photo icon back to my home screen? I don't know how I managed this - but my lovely 'happy' photo icon is gone from my home screen and I can only access it through the double click - I would like it back on the home screen...any ideas???

You looked on every page & in every folder(if you have folders)? Still don't see it? If so: Settings>General>Reset>Reset Home Screen Layout...see if you see it now.

Try rebooting your iPad and see if they reappear.
Reboot the iPad by holding down on the sleep and home buttons at the same time for about 10-15 seconds until the Apple Logo appears - ignore the red slider if it appears on the screen - let go of the buttons. Let the iPad start up.
If they still do not show up, make sure hat you don't have content restrictions set that could prevent certain apps from showing up on your iPad. Settings>General>RestrictionsAllowed Content.
if you still don't see them, connect your iPad to iTunes on your computer and you should see them in the iPad mini screens on the right side of iTunes after the iPad has been selected under "devices" and when you are in the apps pane of iTunes.

Safari came with the phone and cannot be deleted. It is there somewhere. Look for it on another screen or in a folder. Place finger in middle of screen and swipe down to reveal search and type in safari. Go to settings/general/reset/reset home screen layout and find safari again

I can't find a recycle bin to reinstall it. When I go to settings there is no option to reinstall it.

The App Store app is a built-in app, so it can't be deleted (and there isn't a recycle bin on the iPad). If you can't find it on any of your homescreens or app folders, and you can't find it via the spotlight search screen (swipe your first home screen to the right), then is it hidden by Settings > General > Restrictions > Installing Apps being set 'off' ?
If not then have you tried a reset to see if you can find it after the iPad has restarted ? On the taskbar and in the start menu, iTunes only shows a default icon. How can I get the iTunes icon back?

Right-clicking or Control-clicking on an icon in the Dock will bring up a menu like that (it is a contextual menu, so its content varies a bit from program to program).
Usually, it is necessary to only click an icon in the Dock once in order to start up the program (if it has been quitted) or make it active (if it has not been quitted).

Remember, if you ever want to find an app quickly, you can slide all the way to the left (iOS 6 and lower) or pull down (iOS 7 and later) to get to an app.
If you know for certain that you have deleated the app, please try restarting your phone. There are many ways to do this, but the safest way would be to hold down the power button and then slide to power down.
Once powered down, restart and try to find the icon on your screen. If you still can't find it, go into the App Store and then find the app you were trying to access. It should have an iCloud download symbol since you've purchased it before, rather than saying "install."

If you have Mail setup a a client for your Gmail account set iPhoto to use Mail. Then select one of Mail's stationary templates for photos and use it. May not be as good as the iPhoto templates but will be fancier than a plain email window.

Attempting to use it, the program informed me that I needed to be using, either, an EI or a Firefox Browser mentioning version 1.5 {I think it was} or later. The Firefox browser I was using was 3.something; so, everything was going along FINE. When I installed the video capture program, it added the plugin to the browser ~ PERFECTLY!!! I, also, had MANY other plugins that worked and that I used somewhat regularly!!! NOT ANY MORE!!! YOU and your TOTALLY INEPT, WISHTHEYWUZ "PROGRAMMERS" have STOLEN nearly HALF of my COMPUTER!!! I can, no longer, USE ANY OF THOSE PLUGINS, simply, because YOU "forgot" {let's say} to INCLUDE them in your new browser version 4. WHAT WAS WRONG WITH THEM??? WHY DIDN'T *YOU* WANT ME TO BE ABLE TO USE THEM, ANY LONGER???
