Itunes only give the remark that my imac have the latest verson.

If you have an iPad2 as your tag line states, when you connect your iPad to your computer's iTunes, you should get a message stating that there is an update available for the iPad and that update would be to iOS 7.0.3.
Did you click on Check for Update in the Summary window of iTunes when the iPad is connected to the Mac, with iTunes running and with the iPad selected?

    If you have an iPad 1, the max iOS is 5.1.1. For newer iPads, the current iOS is 7.0.2. The Settings>General>Software Update only appears if you have iOS 5.0 or higher currently installed.

        5.    After your iPad has been synced to iTunes, select your iPad within iTunes. You can find it on the left side menu under Devices.

    The only Firmware in the iOS 4 series that Apple is still signing for the iPhone 3GS is 4.1. So you could restore  to 4.1. You will have to download the 4.1 IPSW from Apple, and then install it with iTunes, Option Click Mac or Shift Click Windoz, on the Restore Button and then select the 4.1 IPSW on your computer. The current iTunes may give meaningless Errors, I doubt because you are Upgrading. But if Error Message is given you will have to search the Web for ways to Exit Recovery.

    It has always been very basic to always maintain a backup copy of your computer for this very occasion.  USe your backup copy to put everything on the new computer, then sync.
