How do I use the Services menu to convert text to an iTunes track?

I'm trying to convert text to an iTunes track using the Services option on the Firefox drop down menu, but having trouble with it. I have set my preferences to turn on that option, but all that happens is I get a spinning wheel at the top of my screen, and it doesn't record. I can't see anything in the iTunes settings that I need to change, but wondering if that could be the problem? Any help would be appreciated.

Using the Services Menu

I don't know how to make this work. Say I want to use Grab, I go to Services, select Grab, and the submenu is grayed out. so I open Grab and repeat, and the Grab submenu is still grayed out.

Personally, I think the Services menu is the most useless thing ever put together by Apple. How it functions is not at all intuitive, leading one to the conclusion that it does NOT Just Work. The Grab Service is a case in point. AFAIK, one of the few occasions when the options are available is if you have a TextEdit document open, and the said document is in RTF format. Then the Grab service will be available. The Grab service does not work in Finder. It does not work in Preview, but in Preview you can access Grab in the File menu (evidently the software engineers who wrote Preview realized that one would want to use Grab with Preview, but that you couldn't do so thru the Services menu, because of the way Services works, so they added it to Preview's own File menu). Insane.
The general principle of Services is that it will only work in programs that support Services, and the program in question must be able to handle whatever-it-is that the service does. Finder won't open a png file in a new window, thus no Grab service. Ditto for most programs. In the case of Preview it will handle png files, but it has no mechanism for creating a new window. So no Grab Service. And so on.

I imported photo from my iPhone 4 to t iPhoto on my MacBookPro. Then I wanted to export some of those photos as jpeg file, using the export menu of iPhoto, to put them in a folder in Finder. When I did, all the original have been lost.
I tried to copy/paste and I had the same problem.

Why do you think the date has been lost? If you export the photo from iPhoto the date the photo was taken is there in the EXIF data (simple EXIF viewer will let you see it - http://homepage.mac.com/aozer/EV/ )
My best guess is that you are confusing the file date with the photo date - they are totally different - photo programs like iPhoto use the photo date - file programs like the finder use the file date - they have no relationship to each other

Can I remove items from the Services menu?

I think the subject line says it all: can I remove items from the Services menu? I have a number of items in the Services menu that I never use and I would like to make the menu shorter to make it easier to access the items that I do use.

There are a couple of things you could try. There's an application called Service Scrubber that is supposed to do this. But the web page says it's for 10.4, though it says it might work on 10.3
Alternatively, you can edit the Info.plist or Info-macos.plist file in each application bundle to remove its service from the Services menu. This post at Mac OS X Hints has a pretty detailed description of how to do it. I tried this on my iMac running 10.3.9 and it worked just fine.
Don't know about the Service Scrubber app, but if you edit the plist files, you'll need to log out and log back in before the changes take effect.
Also, if you decide to edit the files by hand, I'd suggest just renaming NSServices by adding an "x" to the front or something, rather than deleting the item completely. That makes the changes easier to reverse.

This looks a bit harder to fake. I'd bet Applescript
has the functionality, and there may be some
command-line hooks to backend that, or it may be
possible to netcat your way through it.

How does one use the Japanese fonts in Font Book in a Pages document. Pages has its own fonts but I cannot get the Japanese fonts into it.

To type japanese on a computer you change the keyboard, not the font. Go to system prefs/keyboard/input sources and add Japanese/Kotoeri to the list, then select Hiragana in the "flag" menu at the top right of the screen, then type. The font will take care of itself.

OK. You've kind of skipped over the reason why you want to go back five hours, but my assumption would be that you've made changes to a Pages file that you want to revert.
There are two ways to tackle this. From Pages itself, open the current version of your document, and from the File menu, click Revert To, and Browse All Versions. You'll then be in the Time Machine interface for that file, and can browse back to the version you want.
Or, outside of Pages, you can select the file (or the folder it was originally in, if you've since deleted it) and enter Time Machine from the TM menu (it sounds like you've already tried this?)
