How do I whiten a background without affecting all the other colors?

Glad to hear it. The Magic wand is ideal for quick selections when you have great contrast differences. It works for more complex selections as well but can be fiddly getting the tolerance right and having to fine tune (often at high zoom) when it misses a spot or includes an unwanted spot. That's when you have to think whether or not alternate selection methods might be faster (e.g. masking as described by hatstead). Entire books have been written essentially covering 'selection' methods (e.g. Katrin Eismanns 'Masking & Compositing' (where she states in her intro that really it should have been called Selections, Masking & Compositing but that was too long) for Photoshop - but much relevant to Elements as well).
