Look around these forums. You can find lots of complaints about 4.0.1, and every other version. You have to go back to when each version was released. Later, when the next version comes out, you will see many users asking how to go back to the wonderful previous version that everybody had been saying was terrible. Most people have no problems, but they rarely post about that. Some of the problems may be cause by something going wrong in the update process, not due to something wrong in the new version being installed.
When a new version is released, Apple will start putting it on all new iPhones. They never have the massive recalls you would expect going by the reports of problems that you see here. They never go back to earlier versions. If a problem shows up it will be fixed in a future update.

As for splicing them together, you will need a video editing package for your PC. I don't know if Windows Movie Maker (or whatever they're calling it now) can handle this or not. On a Mac, I'd say just use iMovie.
