How do  I set up my existing Itunes account to back up two IPhone 4S's?

You can just connect each phone to iTunes and back it up. The devices will be recognized as different phones and will keep separate backups. You can also sync each of them with iTunes and each can have its own sync settings.

    You can't, well not easily anyway.  The iPad is not meant as a multi account device. 
    You can Sign Out of your iTunes account in Settings->iTunes and App Stores->Apple ID->Sign Out
    However if you sign in with another ID and then download past purchases with it you will lock out the previous ID for 90 days. Which means it will not be able to be used on the iPad for 90 days.

    If your friend's account is still logged in on it then tap on it in Settings > Store and log out of it and then log in with your account. You can then re-download your apps via the Purchased tab at the bottom of the App Store app (though you may be limited as to which apps you can re-download depending upon what iOS version the phone is on and the app's minimum requirements), and also ibooks and (depending upon which country that you are in) potentially music and tv shows/films : re-downloading.

    I live half a year in Germany and half a year in California. How can I use my different Apple ID's to buy in Germany from the US-iTunes shop and in the U.S. from the German shop. Reason: the shops have different offers. Some booksare not available in the German shop and some are not available in the U.S. shop.
    For a person, who lives in both countries the restrictions makes absolutely no sense.

    For starters, there's probably not many people who have dual national residencies so I'm guessing it's not a priority with Apple.  The solution according to the store terms of use regarding your physical location, credit card billing address, nation of store, is when you are physically present in Germany you should be making purchases from the German store with a credit card billed to an address in Germany.  When in the USA you buy from the US store with a credit card billed to a USA address.  You're not supposed to use a store in another country when not actually present in that country even if you have a valid account there.

    Tunes Store: How to redeem a code - http://support.apple.com/kb/HT1574 - If you have an iTunes Gift Card or other code that you want to redeem in the iTunes Store. Includes hierarchy of how things are charged. - I don't think you get a choice.
    If for business purposes then you might consider setting up a separate AppleID for rigorous accounting.

    There are many different ways to handle this and the easiest way is to migrate you data is to use Migration Assistant. It will migrate not only your music but also other content from your Mac Mini. If all you want is music, you can always just select that as an option.     Put everything on the computer to which she syncs, and sync them to her iPhone.

    You can't.  iCloud only backs up iOS devices.

    Just connect them your computer. iTunes will treat each device separately. Or if you mean iTunes Store account, you can choose what you download to each device, either directly from the iTunes Store or in synching from iTunes on your computer, as long as you don't have automatic downloads turned on.

    You need to start by understanding the distinction between iTunes and iCloud - Apple confuse the issue by referring to 'iTunes Match' as part of iCloud. It isn't.
    You don't have to have the same login (Apple ID) for iTunes and iCloud; many people don't and there's no problem about it.
    Your iCloud ID gets you email, calendars, contacts, iWork documents and PhotoStream syncing between devices.
    Your iTunes ID gets you the iTunes Store, the App Store for iOS, the Mac App Store for OSX,, 'iTunes in the Cloud' (downloading of purchased items to any logged-in device) and 'iTunes Match' (uploading of songs not purchased in the iTunes Store).
    Your family members can easily each get their own iCloud account to keep email etc. separate - in each case they will need a different non-Apple email address (a free one from Yahoo etc. would do) to set up the ID. If they are sharing a Mac they need to be using a separate user account.
    They can have their own iCloud accounts and still all sign into the same iTunes account: or they can open their own iTunes accounts using their new iCloud Apple IDs.
    BUT they cannot transfer items purchased under the present iTunes ID to different iTunes IDs.
