Seems that you can no longer hide them on your phone. Try doing so in iTunes: http://support.apple.com/kb/HT4919.

So I took off all my toolbars and then I had enough room to see the top of the start button (tab?), enough for it to work. There are lots of ideas floating on the web for this particular issue - all of which I tried. I had the same problem and it turned out to be my USB cable. I thought the cable was fine as it would charge my phone and play but the data transfer pin was bent. I replaced the cable and it fixed the problem. Worth a shot as it is an easy fix!

If they are still in your iTunes library, the answer is "yes", you can resynch to get them back.
If they are not in your iTunes library, and no longer on the iPod, I do not believe they cannot be gotten back easily. You might be able to have someone see if they are still on the disk, but that can be $$$. This is why the ITunes library should be viewed as the primary repository of music, even if you need to purchase an external hard drive or two to have the music and a backup.

You choose to not copy them off to a computer as they are designed to be.
If they are no longer showing in iCloud, they are gone.

They would only be on your computer if you imported them. You would have selected a program and/or location and imported them as you would with any digital camera.

If the photos were from Camera Roll, then they are saved on your latest iPhone backup. You could restore the backup from iTunes (or iCloud).

If the movies were rentals then no.
If the movies are purchases and you have the iTunes 10.4 then you should be able to access the 'cloud' option from in the main iTunes page - purchases - (upper right corner) and go from there.
You should also have the option to transfer purchases from the iPad back into iTunes. I don't have an iPad but you can transfer purchases from the iPod/iPhone back to iTunes.
