This should give you some good insight, I'd probably store them on an External HD on the old machine and then just drag and drop to the new machine.

You can transfer itunes purchases: File>Devices>Transfer Purchases
The iphone is not a storage/backup device. The sync is one way - computer to iphone. The exception is itunes purchases.
It has always been very basic to always maintain a backup copy of your computer. Use your backup copy to put everything back.

Connect the old phone to your computer, right click on it in iTunes, and choose Transfer Purchases. That should put all of your music in iTunes except any tracks that were not purchased from iTunes. Yes you can definitely do this. You'll need an app on the iPad that handles PDF viewing and editing. There are many around - two of the best I've seen are GoodReader and PDF Expert.
In iTunes when you iPad is connected to your PC, go to the Apps tab and scroll down and you'll see the File Sharing section. You can drag files to there to share them to your iPad.
You could also look at online file sync services like PDF to ePub Maker if you prefer not to have to connect your iPad to a PC

I doubt you are going to be able to find all those previous versions and the time it would take to install, open the project, verify it, and everything in between (and without license keys, they would only be saved from trial versions which would be an issue), it seems it would be better just to start with Cp7 and put the effort into that.
Completely off topic, one of the things I like about Authorware is that Macromedia provided previous versions that would allow you to open up and save the projects to get to version 7. It was a nice little touch they provided for developers. I don't believe that Adobe does this for Captivate though.

If they were purchased from iTunes then connect the phone to your Mac's iTunes and the File > Devices > Transfer Purchases should copy them over. If they came from other sources (e.g. copied from CDs) then you will need a third-party program on your Mac to copy them back - there are some listed half-way down this page : Recover your iTunes library from your iPod or iOS device.
If by 'missing' you mean that you have them listed in the Music part of your iTunes library but get the 'would you like to locate' message when trying to play them then you will need to delete them from there for the Transfer Purchases to work - otherwise that will see those entries in your library and assume that you still have them somewhere and not copy them back.

How can I change my project from 720X480 to 1440x1080

I didn't check to see what the settings of my PRE-9 were before I started a two-week long wedding edit. I shot the segments in 1080i using my Canon T2i, and have had great success so far.
I now see that my project settings are wrong and the rendered version is not fit of DVD. I can't find a way to export the cut and edited footage or copy and paste onto a new PRE-9 project with the correct settings.
Is there a way to fix the settings without re-editing this multi-camera project from scratch?
Any suggestions will be very appreciated.

Not easily. Some people have hacked the .prel files but it is quite complex. The most common recommendation is to use the third-party tool ClipMate. This allows you to cut and paste footage between projects. So you can create a new project with the correct settings and cut & paste between them.
What is your delivery format going to be? If it's to be DVD rather than Blu-Ray you would be better of downsampling your HD footage to SD first.
