For the music, you can transfer your music from your old computer to your new computer using an external HHD, once the music are in your new computer, open up itunes and add your music folder to the itunes library, do the same with videos.
For your apps, log into your your itunes account and there you will find your "purchased" apps list. Cilck on purchase to see the list and download them again back to your computer.

the simplest way, assuming all your media files are in the default location, would be to connect the two Macs with a firewire cable, boot the source Mac in Target Disk Mode, and copy the entire iTunes folder (not just the iTunes music folder) from <MacintoshHD>/users/yourname/music on the source to <MacintoshHD>/users/yourname/music on the target (overwriting the iTunes folder in place there).

Syncing an iDevice to a computer does not remove content from the computer.
Syncing an iDevice to a computer that it does not normally sync with will remove the content from that device.
If the media was acquired with a different Apple ID it is in no way linked to your Apple ID.

1. When I first got an iPod touch (4th gen) I synced it (to start it up) on my mom's Mac Laptop. I finally got my own laptop and tryed to sync my music and info from my iPod to my ASUS laptop, but it said that the only way to do that was to clear all of my info. thanks but if Im using iCloud For my Iphone and backing my ipod touch to my computer is that ok or would I have to back both up to ICloud. As u can telll, I want to kep the 2 devices seperate as much as possible, only putting on my phone what i choose to download, buy, or take from my current itunes library most importantly.
