    It's really bothering me.

    Many developers when they updated their apps to support iOS 5 and 6 dropped compatibility for iOS 4.2.1 and earlier.
    Your only way is if you have the version that was compatible on your computer such as in the recycle bin/trash or in a computer file backup. In that case delete the current version that is in your iTunes App library and replace it with the older version. Then sync.

    Syncing to a new iTunes library or computer will erase your ipod. Only if you back up your device manually before syncing, you can restore from that backup again. A manual backup does not include the sync process.
    Here's how to:
    Disable autosync in iTunes, connect your ipod to your computer and right click on it in the device list and choose backup. iTunes will backup your ipod without syncing.
    Transfer your purchases the same way, choosing "transfer purchases" this time.
    When you connect your device for the first time, all media content will be erased. But you can restore your settings and app data from your manual backup afterwards.
    Don't forget to set up at least one contact and event on your new computer to be able to merge calendars and contacts when you sync the ipod for the first time.

    I'm assuming you're referring to the original iPhone.
    More than likely, it was jailbroken or hacked to unlock it.
    In the US, all of the original iPhones sold were locked to AT&T. AT&T did not offer unlocking at the time.
    The best case scenario is that it has now re-locked to AT&T. Luckily, AT&T now offers unlocking. All original iPhones were sold at full retail. They were not subsidized.

    You can't delete iTunes. The preinstalled apps cannot be deleted or installed again. It's there somewhere.
    Swipe from screen to screen to look for it.
    Check Settings>General>Restrictions and make sure that you didn't disable it.
    You can also reset the home screen layout and the icon will reappear - but the home screen will return to the way that it looked when you first activated your iPad.

It will freeze up when I use certain apps and also has a tendency to switch album covers, though now theres no album covers left on the ipod, the my itunes library is still fully intact...
