To confirm, your existing mail client isn't communicating with your existing and remote mail services at Dreamhost? Which mail client are you using (Apple mail?), and how is mail on the client set up?
It would initially seem that your client is still referencing the server, either for its inbound or outbound mail. (And I'm not sure how unplugging the server helps here, unless there's some sort of a configuration issue, or a duplicate network address or such.) This would usually be something within the configuration of the mail client.
The Mac OS X Server is significantly easier than the many other servers and server operating systems I've dealt with over the years, but it requires reading the manuals and/or some knowledge of networking and of server environments.
Small shops and home folks without the time or inclination to "spin up" on these server areas can be well-served with some help initially configuring the server. Servers are different from clients. Stuff that you're implicitly used to using when you're running a client -- the DHCP server, for instance -- are what the servers provide you with.
As for Mac OS X Server and particularly if you head outside of the default settings and sequences and off into the customizations, which is what has happened here, you might want to engage some assistance. Not just for the direct and obvious initial set-up sequence, but also for getting you set-up and started with backups and other such tasks. Before you get too deep in here and get too much underway and too much saved on your disks, do seriously consider getting somebody in to help set this box up for you.
Mac OS X Server is not "no IT", but it is rather closer to "less IT" than most. Particularly once you get it configured and running.

Check Settings > General > Restrictions, and check out Contacts toward the bottom under the privacy restrictions.
That sounds like the probable cause you cannot add contacts.
Regarding the iCloud behavior, that sounds like it got huge (35,000) because of incorporating other contacts (from social media, perhaps). Also contacts sync has nothing to do with iCloud behavior. The whole idea of keeping your contacts in the cloud is that once you change them on one device, they change everywhere. Specific syncs are not relevant. -

Why would you create a new account?
All purchases will be tied to the account from which they were purchased.
You will have to authorize your computer for all the accounts from which music is purchased. -

I had a very similar problem. Eventually I figured out it was related to Quicktime. I installed the latest Quicktime and Itunes suddenly worked.

I'm trying to send a photo from iphoto - but apparently I entered the wrong password, and now it does not give me the opportunity to resubmit my correct password - it only tells me that mine was wrong and will allow me to cancel but not correct. The usual cause of a problem such as you describe is this.
1. I download Adobe Acrobat Pro free trial.
2. I install the trial (or not).
3. But then I run Adobe Reader
4. I try to use Export PDF or Create PDF in Adobe Reader.
5. Nothing has changed, these still need a subscription.
If this is the case, make sure you use Acrobat. It does NOT change Reader, it's entirely separate from it. -
Access app crashes and does not want to open. What a reason?
I often use one Access application which consists of many calculations in VBA code. One “perfect” day this application simply crashed while running. And after this event everytime I try to open it it crashes and closes. I suppose that
this issue somehow related with an excessive file size. I thought about all the created and then deleted data and I can’t be sure that Access make this space free again. So, just in case I set all temporary objects to nothing, but with no result. Maybe I can

Access isn't really very capable when it comes to handling large volumes of data. If i am not wrong 2003 and 2007 Access versions have about 2Gb size limit. If your file is near this limit point
then maybe really it is time to split the database, as Bill said.
Also sometimes a bad written VBA code can be a cause of some problems. So, you should be more careful with it.
If the problem still exist, then maybe you need to run any third-party software. I would suggest Recovery Toolbox for Access

Photoshop CS5 does not want to open after I changed the scratch disks in prefs
I was working on a large document in Photoshop CS5 that ate too much of my main drive (to the point I had to quite and restart a few times to clear it out) when the main drive was set as a scratch disk. I went in to preferences and changed the scratch disk to my secondary internal drive, where I keep all my media. Then quit Photoshop to clear the cache.
When I tried to open Photoshop again I get a message at start up (haven't gotten in to the program yet) saying: "Could not open a scratch file because the disk is not available". Clicked OK. Then another warning message: "Could not initialize Photoshop because the disk is not available."
Both disks are mounted and available. Since Photoshop never actually opens up I cannot go in and reset the scratch disk to my intinital settings.
Anybody got an idea what I can do to solve this?

/FredWorst case: trashing prefs by keeping ctrl-alt-shift pressed while starting Photoshop (and then using the dialog) should allow you to open it.
