The iPod backup that iTunes makes includes Notes.and other app data. However, it does not included synced media like apps and music.
Thus, just restore from backup with all your synced media in your iTunes library.

Your iPod can only be synced with one computer at a time. If you try to sync it with a new computer/iTunes library, it will replace the contents of the iPod with whatever is in the new library. You should probably disable the autosync functionality first by going to Edit -> Preferences, clicking the Devices tab, and enabling the prevent iPods,iPhones, and iPads from automatically syncing option.
Before doing anything else, authorize the new computer with your iTunes Account. In iTunes, choose Store -> Authorize This Computer and enter in the correct credentials. Either copy a backup file from your old computer to your new one or create a new backup of your iPod in iTunes before letting it sync.
Then right->click on your iPod Touch from under the Devices section in the left hand pane of iTunes and choose Backup. You might also want to take a look at this article to see what it all included in the backup.

Now onto synced content such as music, videos, photos, etc. For iTunes purchases you can copy them back into iTunes by choosing File -> Transfer Purchases. Ok so I reset my ipod touch 4th gen and it got stuck on the apple logo screen and holding down the buttons just made it turn off for a few seconds and go straight back onto the logo screen, nothing was happening with it connecting to itunes either. But I held the home and the power button down at the same time while connected to my laptop and then when the logo reappeard I released the power button and it came up with with the itunes logo and the usb logo. It then allowed me to select restore on itunes which I did but a box popped up saying "The ipod software update server could not be contacted. make sure your network settings are correct and your network connection is active, or try again later." Please help.

ITunes always wants to restore my iPod Touch (4th gen, IOS 5.1.1) constantly
I have an iPod Touch 4th gen, IOS 5.1.1
When I plug it into iTunes, I get an eror message saying:
"iTunes cannot read the contents of the iPod. Go to the Summary tap in iPod preferences and click Restore to restore this iPod to factory settings."
I have restored my iPod like the message says, but once it is done restoring and I have unplugged it from the computer, the next time I plug it in the message comes up again. I have tried reseting both from backup and as a new iPod.

I found this article when searching for info on restoring (to factory conditions) an iPod Touch 4th Generation. Now I thought this shipped with iOS 5.x (x unknown). But as mentioned too briefly in the header, when I click 'Restore' in iTunes, it offers not to restore, but to update. That is not what I want. I need to use this iPod Touch with Xcode 4.2 under Snow Leopard.
So the question is: what is really going on here and why? Is it really true that 4th G iPod Touches ship with 6.0.1 instead of 5.x? If not, how can I get it to really go back to the original? Why is iTunes failing to offer a restore when I press 'Restore'? If I guessed wrong about which of my several machines running iTunes (some under Windows7, one under Snow Leopard)I used when I upgraded to iOS 6.0.1, would that explain iTune's failure to offer a true Restore?Restore will not replace an old iOS level. It will update the iOS level to the latest level. If you have to restore youre iPod that is what will happen. The iOS is not a part of a backup.

The 2.3 GB of other is iOS 6's update file on your iPod. Go to General-Reset-Reset All Settings. This will reset all of your settings, but your data will be preserved. This should delete the update file.

I don't know how an email affects using your iPod nano... But what you want to do is called a Restore. You do this with iTunes, so you need to have iTunes installed on your computer. If it's not installed, you can get iTunes here

My home button broke awhile ago so I've just been using the assist thing ( I forget the name:P) and I got locked out a few days ago and now I can't do the hold down the sleep/wake button after disconnecting your device from the charger and hold onto the home button blah blah blah. My iPod Touch 4th gen is disabled for 22,000,000 minutes. I have looked all around the Apple support communities and I always find the same "solution", which is to put it into DFU or recovery mode and restore from a backup. Here's my problem: My computer crashed awhile back and I had to completely start over from scratch. So, unfortunately, a backup of my device no longer exists on this computer or any other computer.
Is there any way I can simply get rid of the disable? I remember my passcode, so that isn't a problem, all I need is to be able to input my passcode.
Or, do I absolutely have to restore to factory settings, and lose all my data?

If you restore from iCloud backup the apps will be automatically downloaded. If you restore from iTunes backup the apps and music have to be in the iTunes library since synced media like apps and music are not included in the backup of the iOS device that iTunes makes.
