Itunes wont locate the most recent backup of my iPhone

I was having a few issues with my iphone 4s so synced it in itunes and backed it up then put phone into DFU mode to reinstall the firmware 5.0.1. then went back to itunes and in the drop down list of "restore from backup" i couldnt see the backup i had made, the newest one was from Oct 2011.
in the following directory Library/Application Support/MobileSync/Backup i found a file with the date stamp of when i did my last backup, but this dosent show up in itunes.
is there a way of directing itunes to this specific file to make sure i can restore from my latest backup as i dont want to have to backup from a file which is 3months old.
any advice please?

Where iTunes backups are stored on your computer
The folder where your backup data are stored varies depending on the computer's operating system. Make sure the backup folder is included in your periodic data-backup routine.
iTunes places the backup files in the following places:
Mac:~/Library/Application Support/MobileSync/Backup/
Basically you'll have to restore the whole backup folder, leaving the content untouched, from that point in time when you still had your latest backup. Before you start, copy the backup folder to a save place, just in case.

All you can do is restore from backup. To do that see the restore topic of:

Also, turn off autosyncing so that when you reconnect the iPod to yuor computer the old backup does not get overwritten . To turn off go iTunes>Preferences>Devices and check the box that says "Prevent iPods...".
iTunes only retains the most recent backup and updates it with the changes.

No, to the best of my knowledge the device backup area is simply updated with new information each time the device is backed up so there are no previous versions preserved. Once a backup has been used to restore a device however it gets locked and dated so that you could return back to that snapshot at a later date.
Your manual backup should have simply updated the backup with any new data since the last automatic backup. Upgrading should not have overwritten a backup taken just before the upgrade with a, presumably, empty state. Have you actually tried to restore the current backup that is available? It may have what you want after all. You might like to try backing up the current state of the device to iCloud first, or if you have access to another computer back it up to that.
N.b. I always disable automatic syncing of devices so that I am in better control of when data starts to be written, and in which direction it flows.

I understand that you are wanting to restore your new iPhone 6 from an iPhone 5 backup. This sounds like the iOS version of your old iPhone 5 may be newer than what was installed on your iPhone 6. Try going through the steps in the article below.

I would also check to see the backup dates in iTunes and if the backup is located on iCloud instead of iTunes.

I upgraded to a 4g and the most recent backup (today) is not showing up. I went ahead and backed up and found that my texts, phone calls and messages did not backup.

I upgraded to a 4g and the most recent backup (today) is not showing up. The most recent backup that showed was 3/3/12. I went ahead and backed up to that date and found that my texts, phone calls and messages are the part that did not backup.
Can anyone tell me 1) why my most recent backup did not show in ITunes, 2) why I could not backup using the Cloud (I tried this way first), 3) how I can get all the phone calls, messages and texts from 3/3/12 until today? Please help if you can...thanks!

How to determine which drive has the most recent backup?

I have a few drives that contain backups of files. What would be the easiest way to figure out which of the drives has the most recent backup? When I sort by date, the folder shows one date, though the files inside show a different date? Is there a way to quickly check the drives to find which is the most recent?

the folder modification date isn't reliable, as is only tells of changed in the folder, but not in subfolders. there is no efficient way. I however highly suggest Time capsule, it is WAY easier and you can ask it not to sync the System data and/or applications, so it would prevent this hassle.
You could try this: go to the first drive, type different letters, like a for instance, and see which file is the most recent document/folder.
do the same thing on the other drives and compare.

If you go to iTunes>Preferences>Devices you can see if you have an iTunes backup. You need one dated before or the exact time you started the restore.

If y have an iCloud backup restore from that backup:
iCloud: Restore your iOS device from iCloud
Go to Settings>iCloud>Storage and Backup> and look at the date of the backup that iCloud has (Last Backup: XXXXXXX)

How do I configure my phone to the most recent sync in iTunes?

I am attempting to set up a temporary replacement phone and my attempts to restore my phone to the most recent backup (completed earlier today) are not working. Instead, my iTunes only recognizes the most recent backup from 1/22/13.
Is there any way I can change my most recent backup so that my iTunes will acknowledge it? If this is not possible, how can I sync the new phone so I don't lose almost three months of text history, photos, notes, etc?
I am using Mac OS X 10.5.8, and both the original and replacement phone are the 4S.

Itunes only keeps one backup and every time you make a new backup the old one is overwritten. If you still have your old phone then make a manual backup of it (http://support.apple.com/kb/ht1766). As to the replacement phone and the three months of messages etc you might use a program likeiphone backup extractor to retrieve and keep information on it and also do a backup but remember you can't merge the two backups and if you restore from a backup the information that you get back is per whatever was on the backup you used for the restore

As you backup the iPhone in iTunes, it overwrites the last backup. Files are kept as they are changed, so that would explain how you get different dates in your backup folder. The only backups that are saved and not overwritten are the ones done just prior to a restore. You do have the option to go back in time on a Windows computer, however depending on the last time you set a restore point in Windows, it could be back further than you are willing to go.

I accidentally deleted a thread of text messages which contained important info that i need to retrieve.
I then connected the phone to my iMac so i could try and restore it from a back up to get the messages back, but it automatically backed the phone up (after i had deleted the messages).
I then went into iTunes and chose to restore the phone from a backup (thinking it would give me the option to chose a backup prior to deleting the text messages), but sadly not. It automatically started backing up from the most recent backup which is obviously not going to get my messages back.
Is there a way to chose an older back up so i can retrieve the messages?

Go to iTunes>Preferences>Devices and see what the date of the most recent backup.
If that b/u has the data that you want to retrieve then restore using that b/u. If you b/u does not have the info then you are out of luck unless the carrier maintains a b/u of messages sent to your phone. I suspect that the carrier would only have the messages sent over their system and not from WiFi.
