    You do not need anti-malware software.
    You have a ton of 3rd party launch agents/daemons which are just consuming RAM that you cannot afford to give to all of these 3rd party packages.
    The same for all the Login Items you are starting.
    Try booting into Safe Mode, which will not load the 3rd party additions, and see if that speeds things up.  If it does, you need to start removing that stuff.

    You could really benefit from more RAM.  You system has been up for 4 hours, and already you are paging data to disk (352MB so far).  And the huge number of page-ins in just 4 hour (21.67GB) is another indication that you could really use more RAM.  The high page-in stats indicates the Mac is throwing away read-only pages, such as executable code and then loading it back in again, and again, and again, ....  If it had been modified data, you would have seen a larger page-out number.
    Doing a Google search for "Macmini3,1 max memory" turned up the following:
    *By default, 1 GB is installed as a single module (MB463LL/A) and 2 GB is installed as two 1 GB modules (MB464LL/A). Officially, this model is capable of supporting 4 GB of RAM, but as first reported by MacminiColo, this model unofficially can use 8 GB of RAM after applying EFI Firmware Update 1.2.
