I'm mainly concerned about my pictures and videos.
Once the Device is in Recovery Mode... it is too late to save anything...
To minimise loss... after the successful Recovery... Restore from the most recent Backup...

Jailbroken phones often cannot be fixed. Apple released a warning about this years ago:
Inability to apply future software updates: Some unauthorized modifications have caused damage to the iOS that is not repairable. This can result in the hacked iPhone, iPad, or iPod touch becoming permanently inoperable when a future Apple-supplied iOS update is installed. -
Recently when I open my Mac the screen stays black until I press the start button a few times. Usually at this point it's in sleep mode. If the system just Restarted on it's own, Shut down while you were working on something then started back up all those changes, edits, you had done in that app, document, are gone.

I forget my passcode, and got locked out of my iPad. I never synched, so my files aren't backed up. I read that I need to restore, but will lose everything. Is there any other way to not lose my photos and files on my computer?
If you cannot remember the passcode, you will need to restore your device using the computer with which you last synced it. This allows you to reset your passcode and resync the data from the device (or restore from a backup).
If you restore on a different computer that was never synced with the device, you will be able to unlock the device for use and remove the passcode, but your data will not be present.
You may have to force iPad/iPod into Recovery Mode

All media should be in the iTunes library on your computer.
Syncing is ONE way from computer to iPhone.
If the media was on your device, but not in your computer, then it's likely gone.
Do you have a backup of your media somewhere else? Like an external drive? -

If the films don't have Japanese as a language option on them then you can try requesting that they be added to your country's iTunes store, but Apple will only be able to sell them there if the rights-holder grants them a license to do so : http://www.apple.com/feedback/itunes.html

More than likely it is corrupt files in the backup that is causing it. You can try to restore the device as new first, then restore from backup and see what happens. Other than that, you would need to restore as new and then sync your content back to the phone to take care of the corruption.

SonnySonny operating any computer without a backup plan is just not wise and you are now probably going to pay a minor price. What would happen if you lost all of your photographs, music and personal records? PLEASE begin a backup plan immediately, there is absolutely no excuse not to. I would recommend first starting out by buying an external HD and using Time Machine and then get a second external HD to create another backup using cloning software such as SuperDuper or Carbon Copy Cloner (both less than $30). For less than $200 you can have a viable and safe backup plan. The reason it's wise to have redundant backups is because a backup can fail too, I've had it happen, thank heavens I had 2 backups which saved the day.

I was burning an audo book to CD. It was six CDs long. After the fitth CD I inserted one that was defective and itunes just ended, as though
the burning had been completed. Now I have five of the six CDs.
1) Why did it do this instead of telling me I had a bad disk or something?

My iphone screen and lock button are broken, I bought a new phone and want to get all the information off my old phone. My old phone will not sync with itunes because it has a pass code on it. I have no way to enter the pass code. Is there any way to get around this so I can still retrieve my information from it?
If you are using the computer that you normally sync with, it should sync without entering the passcode. However, if this is not the computer you normally sync with, you cannot get past the passcode, it has to be entered.

My new iPhone 5 email is synched with my home office computer Outlook email using a POP account, but deleting an email on my computer does not delete the email on my phone and vice versa. Is there any way to get a true synch?.
POP does not support synchronization between the server and clients. You will need to use IMAP or Exchange Active Sync if your email provider supports it.
