What should I do to fix my ipod if it is no longer going into sleep mode, no longer shutting down, and no longer allowing me to take screen shots?

I have tried everything. I have held down the sleep button and home button down for what seems like forever and nothing is working. I don't understand why it is no longer working. Any ideas on what I can do to fix it?

Connect your iPod to your computer and restore the iPod via iTunes. First restore from backup and if problems persist restore to factory defaults/new iPod.

My friends iPod keeps shutting down after it goes into sleep mode. I just fixed it up (restored it, had to dry it out after it fell into water) and now it does that. I would suggest you take a look at advanced power settings. It can seem like the notebook is turning off when it is actually just hibernating. You can set it to not hibernate.
1. Windows key + Q to open the Search Bar
2. Type "power"
3. Click Settings under the Search Bar
4. Select Power Options from the results on the left.
5. In Power Options, Click Change when the computer sleeps, on the left.
6. Set the Put the computer to sleep setting so that it fits your usage best.
7. Click Change advanced power settings, at the bottom.
8. Expand Sleep and expand Hibernate after. If you want you can change the hibernation setting to Never by typing "Never" into the minutes field. See attached picture. You can do this for battery and/or plugged in.
9. Click Apply to save changes.
If you don't already shut it down periodically, I would suggest shutting it down at least 2-3 times a week if you use it daily. Leaving the computer running continuously can shorten its lifespan. Hard drive failures and motherboard issues are seen much more often on machines that are left running constantly. Computers get bogged down and run slowly when the memory is full. Memory only clears out and resets itself when the computer is shut down. Here is a link explaining more about memory accumulation and hardware aging.

The music on my Ipod Nano 6th, automatically stops after a minute. I have to go to the sleep/wake up button, then press play to start the music again.
Is there any way to stop this. Is this happening because I have activated the watch on my home screen.

Make sure your headphones are plugged all the way in, meaning there is no silver still showing from the headphone's plug. You should hear a sort of popping/clicking noise when you have fully seated the headphones. If that isn't the case, make sure the headphone jack is clean and clear of debris.

Sounds like a major hardware problem.
If no change after restoring your iPhone as a new iPhone or not from your iPhone's backup, there is a hardware problem.

In system preferences I can no longer find the option that allows for this energy saving feature. What happened to this option and why is this no longer happening with the latest version of Lion?

No external monitors or devices attached. When you mention that this function only works when devices are attached that is true when you set up your preferences that way. Up until my upgrade to Lion the computer would always go into sleep mode when I closed the lid. There also used to be an option to check in system preferences that allowed you to choose this option. My question for the discussion is what happened to that option and how do you get the computer to sleep or at least the display to sleep when you close the lid as we have been able to do in the past. Check to see if the option for "Use all F1, F2, etc. keys as standard function keys." is turned off. When it is turned on, you would need to hold the Fn key while hitting one of those keys will make it work they way icons are displayed. To find out where this option is, go to System Preferences > Keyboard and in the Keyboard tab is where you want to be. Take a look at the article below for more information.

Which operating system are you running on?
Try starting the organizer while holding down the shift key. Hopefully, it should load the Catalog Manager.
Select your current catalog and click on the Repair button. Once it has finished, click on the Open button to see if the catalog opens.
