How can I return a completed questionaire as an email attachment?

To be able to do that, you would need to save the form after filling it out. Some forms are enabled so that users of Adobe Reader can save them and some aren't.
If it has been enabled to be saved, you would simply save it to your computer, open an email and attach the file like you would any other file.
That's about all I can tell you without more information as to what you have and what you are trying to do.
