Acrobat Pro: Create PDF Form Export so it's not editable User fills out and info is emailed back to me

I have zero experience with PDF forms. A client needs to have the email addresses changed in an older PDF form, so I've opened it in Acrobat Pro, changed the existing email addresses and am now stuck. How do I save it so it's not editable by the end-user? Everything I've tried (Distribution via email, flattening, security) have not worked; either the form fields get stripped out or I receive nothing via email and I can still open the distributed form and edit the fields.
I need it so the end-user will view the form in their browser
Fill out the fields
Click submit and the info is sent back to me via email.
If they download the PDF they can NOT edit it.

Open the PDF and do the following:  File> Save As> Reader Extended PDF> Enable Additional Features

    I have been looking for a solution for a client of mine. I created their website and they were looking for a way for visitors to open a padf registration form from a link on the site that has fillable fields. Once the fields are full the visitor can print the pdf as it must be handed in so do not have to worry about saving electronically.
    I did some research and found Acrobat Pro does this and so far I was able to take a copy of the company registration and make text fields out of the areas that need to be manually filled in. I did this and saved the file now I need to know the following.
    Past regular registration forms were downloaded from the company website thru a zip file, Can I take the new fillable file and be able a visitor to open, filll it out and then print it?
    any help with this as I have a Mac and need to make sure the fillable pdf is accessable on pcs and mac users.

    Simply upload the fillable for to the site then provide a link to it.
    Whether it opens in the browser and they fill it out there or it downloads to their computer and they fill it out in Reader is up to their preferences.

They can be filled out, but not saved, with Adobe Reader.

    To do what Dave indicated you need to do, it depends on what version of Acrobat you have:
    Acrobat 8: Advanced > Enable Usage Rights in Adobe Reader
    Acrobat 9: Advanced > Extend Features in Adobe Reader
    Acrobat 10: File > Save As > Reader Extended PDF > Enable Additional Features
    Acrobat 11: File > Save as Other > Reader Extended PDF > Enable More Tools (includes form fill-in & save)

    I am not aware of a field type "Help" within a PDF form. I do not see it as a form field that can be added in the form edit mode.
    Forms Central forms do not support all the features of Acrobat forms.
    Are you talking about the "Tool Tips" or a hidden field that only shows when one enters a field and is hidden upon exiting the field.

My client would like to fill in the PDF form using Reader, save under a different name locally on their device, and redistribute. The problem I have is that, sometimes, they want to redistribute the form as Read Only. I know how to flatten the form on a mobile device, but uncertain how they can do that with a PC or Mac using Adobe Reader. I looked at FormsCentral thinking there might be a solution going that route, but don't believe there is. Any advice?

    FormsCentral won't help with flattening a form. You could set up the form in Acrobat so that the fields are set to read-only, using JavaScript. Not quite the same as flattening but it's the best Reader can do.
    Note that when Reader is used to e-sign a document, it gets flattened, but this won't be possible if you need to Reader-enable the form and under certain other conditions.

    I used to use Acrobat 9 to create PDF forms that would allow me to fill in text into the fields that were created.  Acrobat XI seems to have changed the way this function is performed.  Previously, I could run an auto form recognition wizard, do some minor tweaking, and be done.  Now, when I attempt to follow the process in Acrobat XI, I get the following message that pops up:  "No new form field annotations were detected.", and no fields get created.  I could do this manually, but the process of doing so is very clunky and cumbersome.  Once I create a new text field, I must then go back and resize it.  This would not be a problem if I was only working with a few fields on a single page, but I have a six page document with multiple fields to create (text fields, check box fields, etc.).  Perhaps I'm missing something, but there seems to be no simple way to do this anymore.  It's making me want to just install Acrobat 9, so that I will have back the feature that I used to have.  I'm using Acrobat XI on Mac, but I'm assuming the function should be the same in Windows.  I can use Preview on the Mac to simply type in the text that I need, but I was hoping to pass along the PDF so that others can use it as well.  This is not just a one time thing.

    There are no APIs for C# and external applications for this conversion.  There is however an API for Acrobat plugins to perform this operation.   So, if necessary, you could write a custom plugin (that calls the API you need) and expose that via some form of IPC to your C# app.

    I'd like to create PDF forms to be used for email questionnaires and surveys. The last time I looked into it I found that I needed to create the PDF first and then use another application (I can't remember the name) to add the fields for the form. I found it to be a little clumsy, and didn't have the layout control that I do with InDesign. Is there a way of creating forms entirely in InDesign?
    Any help would be appreciated.

    That would be Acrobat Pro.
    Nothing ID can do for you here. You still create the PDF with a layout package, and add form fields (which are a PDF feature, not a layout thing) with Acrobat. Fortunately, Acrobat has a nearly magical Form Field wizard that'll help you through that process as painless as possible.

    Are you able to scan using the software included with the scanner, or does this error only occur when you scan from Acrobat? Have you been able to scan from Acrobat previously? What OS and version of Acrobat are you using? So many questions, I know!
    Please make sure that your scanner driver is up-to-date and appropriate for the OS that you're using. And, if the error persists, you can try repairing your Acrobat installation.

    I have seen this issue occur with users who have this registry setting missing or have improper permissions.
    When you double click the attachment to launch the pdf it is saved and opened from the temporary folder unless saved specifically to a location.
    If you dont have the below mentioned registry key or improper permissions then attachments fail to open.
    Please  heck if the following reg key exists:
    HKEY_CURRENT_USER\Software\Microsoft\Office\14.0\Outlook\Security
    or
    HKEY_CURRENT_USER\Software\Policies\Microsoft\Office\14.0\Outlook\Security
    Value Name: OutlookSecureTempFolder
    If the value exists, and if the value contains a valid path, Outlook 2010 uses that location for its temporary files.
    If the registry value does not exist, or if the value points to an invalid location, Outlook 2010, Outlook 2007, or Outlook 2003 creates a new subdirectory under the Temporary Internet Files directory and then puts the temporary file in the new subdirectory. The name of the new subdirectory is unknown and is randomly generated, depending on your version of Outlook.
    Please check the following key:

    With install of Acrobat 9 the Help PDF is installed also.
    From the this PDF's Bookmarks expand Chapter 5's bookmark and select "Convert PDFs to Word".
