After backing up my iphone to icloud I can't find a lot of my old data

How can I retrieve old data stored on icloud back to my iPhone?

Was the data on your phone when you backed up?  If so, did you restore to the backup?

    Hi...
    Tap the Photos icon in the Dock at the bottom of of the screen.
    If you don't see the photos there, tap Settings > iCloud
    Turn Photo Stream off then back on then restart your iPad.
    Hold the power button until "slide to power off" appears.  Slide to power off.  After it is off, press the power button to turn it back on

But the back up was complete. So I don't know what to do, because the photos need deleting to free up memory. When I try to delete photos from Collections - it says "This photo will also be deleted from photo stream on all your devices". Help please!

    An iPhone backup to a computer via iTunes stores the photos in a backup file that is only meant to be be used if needed to restore back to the phone. There is 3rd party "extractor" software available but otherwise the photos are not directly viewable.
    The backup via iTunes was a good idea and your Camera Roll photos should be there and should be able to be restored to your new phone. However if it was me I wouldn't rely on that alone. I would also import the photos to a computer where you can see and verify that you have a copy. That is a good idea at any time (not just when you know you might need it). Any phone can be lost, broken, suffer hardware issues, etc at any time and lose all data on it.     Your signature says you have 10.6.8 - is this correct? There is no iCloud on 10.6.8 - if you had upgraded to Lion, but then reformatted and used the disks which came with your Mac you would have installed an older system, presumably 10.6.8? You will need to go through the upgrade process again to get Lion, so that you can access iCloud.
    As to the apps, those which were not part of the installed system (such as Mail, Safari, etc.) will have to be reinstalled either from the original installers or a backup, and your actual files will have to be restored from a backup.

    If they sign into your iCloud account with your ID, their iCloud backup would then be in your account.   However, they would also be sharing your iCloud account and any data they sync with the account (contacts, calendars, etc.) will be merged with yours and the merged list will appear on both phones.  They would also be able to access your email account and their photo stream photos would be merged with yours (as you would be sharing the same photo stream).  Furthermore, if they are using iOS 7 and turn on Find My iPhone while signed into your account, their phone will require your iCloud ID and password in order to be turn off Find My iPhone, sign out of iCloud or erase and reactivate their phone.
    Unless you wish to share all this data, and have the other person's data merged with yours you should do this.  (iCloud accounts are really designed to be used by a single person.)

    Reset the phone then try it again: hold down the home button along with the sleep/wake button until you see the apple, then let go.

    iCloud only give so much space for free storage, then if you exceed the limit of 5gb you have to pay for additional storage.

    If you plug your phone into your computer you can sync and backup so that when you get the new phone you can restore from a backup instead of setting it up as a new iphone

    Having said that, there is no way I personally would rely on that as the one and only backup of my pictures. I have my phone set to automatically backup via iCloud but I also periodically import all of my Camera Roll to my computer where I can visually verify that the pictures are in fact there (and where I can include them in my normal computer backup).     Backups do not cause contacts to disappear.
    Why do you believe this has occurred?
    Contacts are designed to be synced to a supported application on the computer or a cloud service like iCloud/Exchange.

    Welcome to the Apple Community.
    Photostream when enabled will only add photos from the camera roll that were taken post photostream activation. (Photostream does not currently share video)
    Photostream only syncs photos over Wi-Fi, make sure you are connected to Wi-Fi to begin with.
    Photostream only syncs when the camera app is closed, ensure it is closed.
    Photostream only syncs when the battery is above 20%, try recharging the device
    Try disabling photo stream on your device (settings > iCloud), restarting your device and then re-enabling photo stream.

    PhotoStream is purely a conduit for transferring pictures added to or taken on one device onto all the others seamlessly. Photos are held there only for 30 days. There is no way of accessing, viewing or deleting individual photos; you can reset the entire Photostream, erasing everything.
