Alternatives to Notes.app that will sync WITHOUT a cloud service

I am looking for viable alternatives to Apple's Notes.app to keep and sync notes between my iPhone 4s and my Macbook Pro but THAT DO NOT REQUIRE ANY CLOUD SERVICES.
Prior to OS X 10.8 Mountain Lion this was possible.  However, Mountain Lion removed the ability to use iTunes to sync Notes between devices (with or without cable) and now requires "cloud-type" connectivity/services.  While I like the new Notes interface in Mountain Lion Notes.app  I bemoan the loss of syncing by cable/iTunes and forcing the use of cloud servcies upon us.
For me personally I want to sync these devices by cable and not via iCloud, IMAP or any service that resides outside of these physical devices. That's my personal preference, so let's not use this discussion to debate the pros and cons of the "cloud" way of doing things (and hopefully we will not divert into a cloud vs. no-cloud cat fight).
What I really want to find is some kind of Note application to replace the functionality of Notes on the iPhone 4S (and maybe other iOS devices) and the Macbook Pro that will allow syncing between devices by cable and that does not require cloud services to sync between devices.
I have read a little about Chronos "SOHO Notes" for the Mac, which apparently requires it's companion "NoteLife" for the iPhone. But there seems to be few other offerings, or I cannot find them.
Does anyone have hands-on experience with these or other products?
Does anyone have pointers to specfic product recommendations?
It might be nice to find some open source applications rather than commercial.

Ok, I thought of something. Haven't done it yet, but will when I "re upgrade" to mountain lion (I downgraded back to Lion when I noticed the issues with notes. It really is a dealbreaker for me.)
This isn't ideal, but it's what I'm going to do.
Contacts (so far) can still be synced locally. Each contact has a "Notes" field. What I'm going to do is create a group in my contacts called "Notes", and when I have a note, I'll just create a new contact for it. I'll put the title for the note in the "Company" field, write the note in the "Note" field, leave the rest blank probably, assign it to my "Notes" group in contacts, and that will be my new "non-cloud notes app"
Again, its not ideal, but I think it'll do.
Apple, please dont *^%! around with the rest of the syncing apps. A cloud OPTION is nice. But it's not practical for a lot of people. This almost got me to switch to Android, becuase if I was going to be forced to sync through clouds, I no longer had a reason to stick with Apple products.

    In desperation I got BlueMarbleSOftware.com's "Memos" app to move memos from my now defunct Palm to my iPhone. I then discover that "Memos" can't create a new category on the iPhone. Grr. It also uses a Google Files account to move them. I keep sensitive information in my memos and I'm NOT going to put that out in the "Cloud". So, this isn't working out well.
    My question:
    Is there ANY iPhone/OS X application pair out there that will allow me to sync my notes/memos to my Mac and not to the Cloud? iTunes is a pretty poor sync mechanism since it can only allow me access to iTunes type stuff. iCal, while not very good, at least syncs with the calendar on the iPhone and contacts also sync with OSX. However, nothing that I can find will sync notes with the Mac directly. Has anyone out there found something that will? I'm happy to pay for it if it DOESN'T go through the "Cloud".
    I love my iPhone's capabilities, but Apple's restrictions on its use are dimming my enthusiasm a bit about the iPhone being a killer "do everything" box.

    This sounds ideal - My read of it wasn't perfectly clear - Does it sync through the USB cable that the Apple sync uses or though a wireless connection? How good is the Mark/Space notes app? Apple's notes doesn't allow grouping by category, everything goes into one place, is the M/S notes app better than that?

    OK here is a problem I have with my calender- all the events are added mutible times for each event- at least 4 of each. So how do I get all of these mutiable events down to just one event. Now this also includes hollidays and personel events  on the calender from outlook. All this I think happened after sync to Cloud- not sure, could have happened after OS 5 update!!! Now this is on my iPhone 4. Now going to my calender on my home computer in outlook no events or holidays are showing in the outlook my calender. If I go to the icloud calender it has mutiable events and holidays like on my iPhone. Now how do I fix this without causing a problem with my other programs?

    Just make sure you are selecting the gmail address as the place to create the event.  Otherwise it will only be saved to the phone.
    For example, my Gmail/Google calendar currently syncs between the PC/Web, android phone backup android phone and two tablets.

    There never was an iCal app on the iPhone. The calendar app that comes pre-loaded can't be deleted.
    Instead of blaming others for your ineptitude, search closely your phone. The app is still there.

    HEre's the deal:
    I run a lot of websites. 50 or so are hosted per dedicated server. Lots of websites means... lots of email addresses. Mail.app in it's infinite wisdon of creating somehting like 4 IMAP connections per email address often crashed the IMAP service on the otherwise exteremely relaiabl;e and well-appointed servers. The ONLY reason I'm still using it at this point is because in addition to running 3 Mac's, I also have the bevvy of iPods, iPhones and iPads. The fact that I can sync my mail withe them is a huge deal and a timesaver to me. Take for instance today. I am launching 2 new sites. I just created the standard 5 email addresses for each sites. That's 10 new email addresses and settings I'd have to put into 3 iOS devices.
    So, is there any commercially available Mail application nthat can sync with iTunes? I HAVE to ditch Apple Mail, there's no way aroud that unless they fix the IMAP issue that I've read countless threads of people complaining to Apple about.
    I'd like to just do this once... it's going to be a huge pain in my a$$ so any help minimizing that aspect of the move would be greatly appreciated.

    All the apps state they are compatible w/ my model iPod Touch.  No restrictions are set that would prevent syncing.  Seems like I might have had a similar problem a while back with one app but can't recall the solution -- it was something simple.

    No, the camera connection kit only supports the copying of photos and videos to the Photos app, it doesn't support copying content off the iPad. For your second camera instead of the SD reader part of the kit, does the iPad to camera cable not work with it for direct transfer to the iPad ?
    For Lightroom and Nikon software again no - you can only install apps that are available in the iTunes app store on your computer and the App Store app on the iPad, 'normal' PC and Mac (OS X) software are not compatible with the iPad (iOS). There are some apps that perform fairly basic editing functions that are available in the store, but nothing as sophisticated as, for example, Lightroom.

    I have some apps that will not update on my IPad 2.  They say they are installing, but Installing is grey..not black, and they have been like this for several weeks.  I cannot find out how to finish the updates or delete them.  Can someone suggest a solution?  Thanks, Ann

    You can only delete them one at a time on the iPad. If you have an IMAP email account, go to your email in on the server using a web browser and select as many as you can at a time and delete them that way. That action will be reflected on the iPad. In IMAP - whatever you do on one device syncs across all devices. If you have POP email - start deleting one at a time.

    You Both can Add one email Account on Both Phones and then sync the Calender With Email - This way when one will add a reminder or event it will automatically synced to the other

    iTunes (for Windows) v 10.7.0.21
    Windows 7 32 bit Desktop PC
    Outlook 2010 32 bit with POP3 mail server
    Appigo ToDo app on iPod Touch
    I reside in Canada
    I have been using Appigo's ToDo Task Manager app on my Touch for almost 3 years now. With their Appgio Sync conduit, I have been able to seemlessly bi-directionally sync between the Touch and Outlook Tasks on my Desktop. Now Appigo is no longer going to support Appigo Sync. I can keep using this sync conduit BUT I will no longer be able to update my Touch's ToDo app (eventually that will be a problem). 
    I DO NOT use iCloud and do NOT wish to use iCloud. I also do not wish to keep my tasks (which do contain confidential information) on anyone else's cloud server. Hence, I need the ability to direct sync between my Touch and my desktop.
    I've been searching the web and the App Store looking for either a way to keep using ToDo with another sync method, OR another app that will allow syncing between the it on the Touch and my Desktop.
    I don't care about syncing emails since they get downloaded on my Touch regardless. I don't care about syncing Calendars and Contacts since that happens whenever I sync my Touch to iTunes.  Just Outlook Tasks that need to be synced. I also don't care for Reminders - seems like a waste of space IMHO.
    I can't be the only person on the planet that doesn't want to use a cloud server, doesn't have an email exchange server and wants to keep tasks in both handheld device and desktop in sync. Please, please, please, any and all suggestions and help will be most appreciated!! IF I need to go to iOS v 6+, then I will need to purchase a new iPod Touch; a huge expense when the Touch I have is still working fine (but if one has to, one has to).

    I'm in a similar position. Just recently migrated to iPhone from Blackberry (and liking it) but would only do so after confirming that I could sync Outlook tasks to the iPhone. Using ToDo and Appigo sync was the solution and it has worked fine. And I deal with Calendar and Contacts in a similar fashion as you.
    I'm not sure I understand the options. I don't have a basic "cloud as a process objection" and cost isn't an issue.But I do want my tasks to end up synced on both my laptop (on the hard drive) and on my iPhone (and soon to come iPad). A variation on your question. Is there no way to do this?

    You should be able to copy it from your iPhone to your computer's iTunes via File > Devices > Transfer Purchases, and if it's compatible with your iPad you can then sync it to it

    where on my computer am I suppose to make the individual picture files and have them to upload on my ipod touch.... I do have a photo library on my computer, but in the photo tab in itunes for the ipod touch and there is nothing checked for syncing, cause when I do check it it always says its going to replace everything i have in my photo library on my ipod touch.....  So how am i suppose to have it checked and have it NOT replace pictures on it????
    Also I cannot make more photo albums into my ipod touch, it just replaces the one album every time....
    I am very frustrated cause I have tried the manuals and the apple support help etc and nothing pertains to my exact issue.....

I waste a lot of time entering information because you can't go to a specific day and enter information, nor can you navigate between months and add information on a specific date by clicking on the date. You can't easily scroll month-to-month and once you do by scrolling through nine months to get to where you want to be, you cannot enter information by clicking on a specific day in the month and entering information. I just called Apple and they verified that this is the way it works. You cannot go to a date and enter information, you keep getting thrown back to today and then you have to go into the calendar and change it manually on the screen. It is just not efficient.
