Back up from iCloud

I had my iphone 5s stolen on the 17th Jan (not sure what iOS it was up to?) stupidly I hadn't backed up on icloud since the 6th Jan, still, not too long passed so was hopefully little was lost.
Before getting my new phone I logged into icloud to run the 'find my iphone' although noticed when logged in that there appeared to be no notes or contacts etc saved there. I checked my notes on my mac itself and all the notes previously appeared to be lost.
Q1. Does anyone know how my notes could dissappear? I assum that even if someone teals your phone all notes / contacts etc are saved to the cloud and on the mac itself?
I tried to run the back up from 6th Jan although (and I'm  not sure exactly how far I got in the process) it appeared to recognise my friends itunes account rather than mine and wouldn't allow me to override this. As far as I know I've never linked to my friends itunes account, the music in my phone is all linked to my itunes account etc. I reset everything on the phone and had to restore from backup that I had a few months ago when I got my new iphone 5s (upgrade from iphone 4)
Q2. Does anyone know how I might be able to retrieve my last backup just earlier this month?
Q3. Does anyone know why my itunes account seems to somehow be connecting to my friends and how I can stop this?
Some apps that I downloaded last weekend are showing in my itunes as downloads but not showing on my phone, then other apps such as Shazam which I had before my phone upgrade is not showing on my phone or in itunes. Also, some photos I took are in my photo stream but others seem to be missing.
Really appreciate any advice on the above.... I'm so confused!

You can only restore from an iCloud backup during the first stages of the phone setup.
If you are already in the operating system, go to settings > general > reset > erase all content and settings.
This will then take you back to the initial iPhone setup screen, choose language, and location, choose your location settings preference and then choose restore from iCloud backup. Enter your Apple ID and password, tap agree twice and then it will show you which iCloud backups you have.
You can then restore from the most recent one. You will need to be connected to Wifi in order to restore.

It shows my old expired Apple id (my old email address). There is no option to change the id and even when I put in the correct password for the old id (used originally) it kicks me out with the message ""Your Apple ID or password is incorrect" .. this is true  as my apple id is wrong but I cant change it.     It restored the backup that was made on your computer 6 months ago, which did not contain those photos. You're wasting your time trying to find them on the phone. They don't exist.
    Hopefully, your friend syncs her phone to her own computer on a regular basis. She needs to plug her phone into her computer and restore it from her last backup. That will restore it to the state it was in when the backup was made.
    She also needs to get in the habit of extracting the photos on a regular basis, like she would from any other digital camera.

    iCloud does not backup your Mac, unless you have a real backup Time Macine etc) there is nothing you can restore.

    No, once removed, backups cannot be recovered.  Also, Apple will remove backups after 180 days of inactivity, which sounds like what happened here.

    It depends on if it is a replacement for an older device.   If so, then set-up as new from backup. 
    If you are using both devices, they can be set up as separate devices, yet sync information through your iCloud account.

    Go to Settings>General>Reset, tap Erase All Content and Settings, go through the setup screens on your device and when given the option, choose Restore from iCloud backup and follow the prompts.  You will be shown a list of available backups and asked which backup you want to restore from (see image below).  Choose the older backup, if listed.  (Note: you may have to tap Show Older Backups in order to see it.)

    Settings > iCloud > Storage & Backup > Manage Storage :
    Then, delete the backup.
    After that to save new ones, turn the iCloud Backup ON.

    It depends on how old your back up is. Go to "Settings > iCloud > Storage & Backup > Manage Storage" to see how old it is and if it makes sense to completely restore your device. If yes, then you have to completely reset your device ("Settings > General > Reset"). After that when you go through the setup assistant on your device, you can choose "Restore from iCloud Backup" and enter your iCloud account and password.

    Thanks for the question. No worries! This just means that the new devices you have received need to be updated before you can restore your backup. This can commonly happen if a new software update comes out after the devices have been manufactured. To resolve your issue, see this resource:
