Backup previously not backed up iphone with itunes

Had not backed up my iphone using itunes for a variety of reasons. Just upgraded to ios8 and would like to back it up to my hard drive but I'm not seeing that as a choice.

itunes gave me the standard message. Something along the lines of "backup completed"
I actually ran diagnostics and disk utility on my harddrive about a week ago. I was just suprised that this happened. I had some trouble finding other people that had a similar problem. Only found a few from some hardcore digging via google.

I manually backed up my iphone with itunes. It said it was successful. I then went to restore my phone..got through most of the process until I had to choose which backup to restore from and my latest backup from a moment ago was never saved? I can't find it anywhere. I'm shocked. I've checked the mobilesync folder.
So I lost a lot of things over the last 4 months. I'll have to just deal with it and move on.
I always backup before tinkering with upgrades. One thing I didn't backup was my system harddrive. I know what everyone is going to say, but I'm just really suprised that now we can't even trust a safety feature built natively into itunes.
If there's no other way to retrieve this, is there a way to prevent this? I guess next time I can triple check and make sure it's in that library folder before moving on... but GEEZ

What's the full error message that you are getting (and is this on your computer or phone ?), and are you using a PC or a Mac - and is your computer's operating system and iTunes up-to-date ?

If they don't fix it then you might be better off asking in the iTunes For Mac or iTunes For Windows forum on here (this forum is for questions about the iTunes store).

Did you check your security software settings?

YOur phone is in recovery mode, any data that was on there is already gone, you will have to restore your phone and use whatever backup you to restore to.

I have tried both options .. back up on this computer and also back up on icloud.
The backingup is fine .. there is no problem .. even synchronizing songs , applications , calender , mail accounts is fine .. only the contacs are not synchronizing. I am not able to backup my iphone. After the last step it always comes up with this message "itunes could not back up iphone because backup could not be saved on the computer" . I tried all solutions mentioned earlier like changing time zone, deleting previous backups & manually backing up, changing user admin, running itunes as an admin, etc .
I guess my problem lies in the Camera roll. I deleted all my pictures in it and I am left with 3 images. I guess they are corrupt as I am not able to delete them. When I try to delete them from iphone gallery, it crashes. When I try to delete it from external devices like when its connected to PC, same problem occurs, cant delete these 3 pictures. I guess they are corrupt.

Otherwise, do you get an error code? This might point us in the right direction.

iTunes told me to delete my backup folder when I was having problems syncing my phone to my computer. After that it wouldn't work at all. I wanted to update my iTunes so I could sync my phone to my computer and update my phones software so I can use the latest apps that need a 4.2 or higher.
This is not fun for me so if anyone knows what I can do to fix this please help. Is it possible to download the "cabinent file" with the lastest iTunes?

Why is it that when I "sync" my iphone with iTunes, apps which I deleted since the previous backup appeared in my iPhone?

I am using latest version of iOS (5.0.1) and iPhone 4.
My question is stated in the title. I wish to sync iTunes according to my current iPhone settings (i.e. backup my current settings from my iPhone to iTunes), not reinstall apps which I have already deleted.
But when I "sync" my iphone with iTunes, apps which I deleted since the previous backup suddenly appeared in my iPhone.
Any advice is appreciated, thanks.

When you sync your phone check the Apps tab in your iTunes sync settings (not the Apps folder under Library on the left sidebar) and confirm that the apps you don't want on your phone are unchecked prior to syncing.
