You should be okay; first, you won't lose your music. If you're worried about losing the files, back it up, but everyone should be doing that anyway. You can authorize several iTunes accounts within iTunes...once you've "Switched" to a German one, when you try to play songs in iTunes from the old account, the first time you do so it will (okay, should) prompt you for your old account username and password, and then once you've entered them, the old music should play okay.
I guess I should caveat that by saying that's how it works for multiple accounts within the same country; my iTunes is authorized to play music from both my wife and my iTunes accounts and it syncs/plays just fine. But they are both in the US. At any rate, it should be safe to try, because you can always switch your account back to the original one.
Second issue is the .Mac thing; you'll be fine. The iTunes account and the email address attached to it is just tied to billing, song purchase, activation, etc... It's separate from any emails the phone is configured to send/receive. You should be able to use any iTunes account with any email address to activate the phone. Once it's activated, you can set it up with any email account you want, Gmail, .MAC, etc....just go into the phone email settings and setup your .Mac account. That's what I'd try at least, can't see why it wouldn't fine.
