Can GarageBand Do This??

I'm creating aiff files from old vinyl recordings for eventual import into iTunes, so as to burn new CD's. Many of these old records are classical music, mono, and of greatly varying audio quality and dynamic range.
I've been using FinalVinyl to actually create the aiff files, and Amadeus to edit them before import into iTunes.
Amadeus does a great job of cleaning up the noise inherent in old vinyl records, and re-equalizing and acoustically enhancing the material.
The one thing that I haven't been able to figure out is how to process the enhanced aiff track and re-record it while manually "riding the gain" on the recording level.
Perhaps what I need is something to simultaneously play the track from the aiff file, and allow me to adjust the audio level in real time, I imagine by recording to a new aiff file. (Just like you would do using analog audio equipment.)
Have never used GarageBand... so don't know if it can do this...

The old LPs are already compressed. That shouldn't change as they are transfered to digital. Adding more compression and EQ can make them sound different than they were supposed to sound. Many of those old boom boxes in the 70s had built in compression for recording, and they made taping a record sound very bad! If you really need to ride the gain, maybe try Audacity (freeware). I assume you are just trying to get the loudness of all of the song to be the same? I'd think that since the old LPs are already compressed, that you should be able to make one gain setting for each song, rather than ride the gain throughout the song. Roxio Jam has gain sliders for each song, and you can audition the CD before you burn it, adjusting the levels anyway you like for each song individually. Roxio also has CD Spin Doctor, but I haven't tried it as of yet.
