Can I Cancel my Current Apple ID and Create a New One for my iPod Touch?

Hello. I'm new to Apple products. I just bought a 5th Generation iPod Touch and am quite happy with it so far.
I created an Apple ID for it, but used an all-purpose e-mail address with it. I have my own domain, and would like to create a new e-mail account specifically for the Apple ID. (I didn't think about this at the time I created the Apple ID. It was an afterthought.)
So, I was wondering if I could either cancel my current Apple ID and start from scratch with a new e-mail address, or can I just configure the Apple ID and change the e-mail address?
Is this possible? If so, which is the most practical way of doing this? Thank you very much. Jd

Content is tied to the account that originally bought/downloaded it - so if you created a new account as opposed to updating the old one, then you will need to continue to use the old account to download updates to its apps or to re-download its past purchases. It is not possible to delete an apple id completely. You can only delete information like credit card, adress, name... To do this, go to iTunes Store, click on your email adress in the upper right corner and enter your password. Now you can manage your account.
An apple id without password is not possible.

Then just delete the music from your iTunes library that you no longer want.
There is no reason to create a new iTunes account to purchase new music. This will not delete the old music in your iTunes library.

I forgot my phones Apple ID password and along with that forgot my password to my email account. I use my work email so thats why i dont really know the email i created for my phone.
So I created a new email and a new Apple ID online but when i put it the new Apple ID in my phone it says its incorect and shows my username as my old email that i had. If that made any sense my entire question is how do i erase my old apple id on my phone and replace it with the new one i submittes online?

No, it's done on the computer, it's just done on the web and not through iTunes. I guess you could do it on the iPhone, but it would be easier to do on the computer.
