Can I restore my Notes from an iCloud back-up? if I synced with the Notes "off" in the iCloud settings?

I synced with the Notes "off" position in the iCloud settings since I didn't realize I had to specifically turn anything "on" to be synced. I had to wipe my iPhone for another issue and restored my contacts, etc, from my most recent iCloud back-up. Can I go back to the back-up and retrieve my Notes, or were they never sent to the cloud to begin with? If I can't, is there ANY way to get them back? And if not, can they be hacked by anyone wince they have all kinds of data that could be used for Bad Things.

I restored from iCloud, although the Notes thing was still "off'. I only just turned it on now, so if I re-restore, will I get my Notes back?

    If you deleted them from the card then you could do a search on the internet and you should find a number of third-party programs that might be able to recover them. If you had copied them to the iPad and they are still on there then you can copy them from the iPad to your computer : photos to PC.

    Thanks for your reply. I don't really understand your answer though. I plugged my iPhone into iTunes with the intention of restoring from my latest back-up as I have lost all my photos and contacts on my phone. However, when I plugged it in it automatically did a sync and a back-up. Now when I click restore from back-up it just restores to what I have on my iPhone now, because that was the latest back-up (it did it automatically). Do you understand what I mean?
    What I am wondering is whether or not I am able to restore my contacts and photos from my last iTunes back-up (before today's one)?

    iTunes is designed to 'sync' onto iPods, NOT the other way 'round. In order to copy content from an iPod back onto a computer, it requires a third-party utility (if you Google 'iTunes alternatives' you'll see many possible options]. Most of them are free.

The phone works great, like brand new now that it's without all the apps and other garbage she had on there.     No, when you restore from a back up it will bring the information in that back up onto your device.  There is no picking and choosing unless you manually move information onto your device.
    Is what I would recommend doing is to restore from the back up, import the pictures/videos onto a computer, then restore the device and set up as new then move the pics back onto the phone.
    The reason the contacts are back is because Contacts, calendars, bookmarks, notess and some other stuff are not stored within the back up.  For instance, I could hand you a brand new phone with nothing on it and you could sign into Settings > iCloud on your device and it would automatically bring that information onto your device.

It I've done a back-up disc, can I reload only the Doctor Who files and not all the music files, etc? Or do I need to save individual items, such as Dr Who seasons, as data on a separate DVD?

    As far as I'm aware iTunes does an all or nothing restore, but then I've never relied upon it so I might be mistaken.
    Fast backup for iTunes library  (Windows)
    Grab SyncToy  2.1, a free tool from MS. This can be used to copy your entire iTunes library (& other important data folders) onto another hard drive or network share. You can then use SyncToy periodically to synchronise or echo your library to the backup. A preview will show which files need to be updated giving you a chance to spot unexpected changes and during the run only the new or updated files will be copied saving lots of time.
    If your media is all organised below the main iTunes folder then you should also be able to open the backup library on any system running the same version of iTunes, regardless of the drive letter or path it appears on.
    With this method you get a file for file clone so if you accidentally delete/corrupt a single file you can just go and copy that back from the backup.
    It's never a good idea to rely on only having one copy of a file, and even worse if that copy is buried inside an archive format. A single error can render the entire archive inaccessible.

    You re-sync them by setting up your iCloud account under Settings>Mail, Contacts, Calendars, and turning on the 'contact sync', assuming that's what you were syncing them with before.  If you were not syncing them with iCloud (syncing is NOT the same as backing up), then you will have to re-sync them from whatever you were syncing them with.

    What kind of calendars? iPhone calendar or from a service like Google or Exchange?
    It is possible you have more than one backup.
    Check in iTunes:
    Mac: iTunes > Preferences (COMMAND+,) > Devices
    PC: Edit > Preferences (CTRL+,) > Devices
