Can i turn off email delete?

This is my first Droid. Whenever I check my email from my Droid, it automatically gets deleted - I just want it to show up at home as "old mail". Can I change this "deleting" feature?

If you're using the default email app (which is pretty useless to me), go to account settings, then "Incoming settings" and look for "Delete email from server". Set that to Never. That should prevent the Droid email app from deleting your mail from the server.
It won't necessarily make show up at home as old mail.
(This is for a POP3 account -- not sure about IMAP.)

There is no way to turn it off, just reduce it. It is a new security feature. It depends on where you are logging in that is generating the email. If you are logging in from a computer browser, if you have cookies on, it should not generate the email except for the first time that you use that device. If it is from logging in to the Find My iPhone app on the iPhone or iPad, if you have a passcode lock set on the device, it will not generate the email, as you will not be logged out of the app on the phone. while you can receive iMessage texts over wifi, if you mean receiving SMS texts then no. SMS texts require a cellular data connection to receive or send, so you'd have to allow cellular roaming to receive SMS texts.
If you only need iMessages you can enable airplane mode, then turn wifi only back on. You can always stop automatic emails by setting each account to "manual fetch" for receiving and then just be sure to never open the mail app so it never checks for email. Then just only allow wifi connections to free nodes and gwt your iMessages and/or emails only then.

Can't turn off "Confirm Delete" option in messages

I've tried 100 times through "messages>options>general options>Confirm Delete> NO>save" but it won't stay on NO. The next time I go into message options, it's turned itself back on to 'YES'

I have a 2011 Mini Server. I don't want to run any of the server software and followed the instructions in the Apple article "How to disable Lion Server". The problem I'm having is that I keep getting email alerts, mostly the same one saying "The host name of server.local has changed to server.local. Some services may not work correctly until they have been updated to use the new configuration." Can anyone help me really shut down Lion server?

No worries. Typically you can rename a machine by just changing the name System Preferences -> Sharing. But there is also a command line option to adjust the name, and if you don't use the command line option, the server freaks out and will alert you about the change forever. ie - for servers, you need to use the command I describe below.
The command is called changeip and can be run from command line in Terminal.app. It is for manually chaning the ip address and or name of a machine. It basically has 4 parameters: old ip address, new ip address, old machine name, new machine name.
Basically the command looks like this:
sudo changeip OLDIPADDRESS NEWIPADDRESS OLDNAME NEWNAME
If any value is being kept the same, just repeat the identical information as both the old and new value.
Example 1: Changing the IP address and host name. This would update the machine's ip address to be 192.168.1.2 and its name would be update to my_new_name.
sudo changeip 192.168.1.1 192.168.1.2 my_old_name my_new_name
Example 2: Keeping the IP address the same but updating the name. This would update the machine's name to my_new_name but would keep the same ip address.
sudo changeip 192.168.1.1 192.168.1.1 my_old_name my_new_name

Have your husband text the word "stop" to 48369. This should take his number out of the iMessage system.
Go into your settings under messaging and make sure the box to send as an SMS if iMessage is unavailable is checked.
Hopefully this will get your messages sending/receiving to each other.
