So it seems the issue is when iMovie is wanting to creat thumbnails, if I ask it to ignore then it's fine but if not it hangs up searching for the video file.

Hold the HOME and SLEEP buttons at the same time until an Apple logo appears. If nothing has happened after holding for 30 seconds charge the phone for 15 minutes with the wall adapter and try again.

No US iPhone can be officially unlocked, thus it will not activate or work on any carrier's network where you live. Tell your Uncle to return it and get his money back. The ONLY way it will work where you live is to first activate it on AT&T's network, pick a plan, activate International roaming...would cost a small fortune. Save yourself a lot of grief, have your Uncle return it.

If it is locked to AT&T, you cannot use it with a sim from another carrier, European or not. You can use the iPhone while on an AT&T sim in Europe roaming on other carriers but that can be expensive. Contact AT&T to get the best international roaming plan you can.
