Can someone tell me.

I purchased an Ipod 40g Video for my bf's Christmas present present present. The Apple Store sales staff told me it would be great for his gym workouts...?? Someone else said that it would skip and that the ideal would have been to get the ipod nano. If anyone has some time to answer I would really appreciate it. I still have a few days to exchange if need to.

You say you bought a 40g Video iPod, by this I presume you mean 40GB. However the new video iPods are only available in 30GB or 60GB.
That aside, the full sized iPods have anti-skip protection/memory, which works for about 20 minutes - after that time, for example whilst continuously running on a treadmill, the full sized iPods can start to skip or jump.
The iPod Nanos are flash memory based, which means they have no moving parts - so these are ideally suited to workouts. However you have to sacrifice capacity, as these can hold a lot less songs than the full sized iPods.
