Can't copy music to 5S properly - 95% remaining greyed out

Hi,
I've just got an iPhone 5s and I don't seem to be able to copy music across to it - well I can, but only an arbitrary selection, and strangely appears to be the same songs it allows rather than entirely random.
I can physically drag and drop the songs from iTunes on to my phone, and the entire correct selection appears under the iPhone tab in iTunes, but the vast majority (maybe some 95%) stay greyed out, like they're still waiting to be synced/copy.
I've made sure I have the latest versions of iTunes and iOS (11.1.5 and 7.1 respectively), have ticked manually manage music and have turned the phone off/on again, as well as rebooting my computer, but with no effect.
I'm really at a loss as to why it's doing this, as I never had this problem with my previous phone (the 4s) - the closest similar error was when it would occasionally fail to copy the songs like this, but reconnecting the phone to iTunes normally resumed the copying process. This trick seems to have no effect here.
As far as I can tell, my phone is working entirely normally in every other regard. A quick scan of the community showed issues with music copying but not quite like this so was wondering if anyone else had experienced this issue and if they managed to fix it?
Any suggestions would be gratefully received as listening to music on my phone is one of the main things I use it for.

    No, you can't copy music via a cable between the two devices - there is a camera connection kit that allows you to connect an iPhone to an iPad and copy photos and videos from an iPhone's Photos app to the iPad's Photos app, but that is all it can copy.

    IPads and iPod Touches don't seem to have the same media copying restriction that my iPhone has. My main computer is at home. I have music at home and at work and sometimes I like to add it to my iPhone from work. I can do this no problem using my iPad or my iPod touch, but when it comes to my iPhone, I can only copy music to it from my main computer.
    Why would the iPhone have this restriction but not the other two devices?

    Although it isn't normally possible to sync an iPod/iPad/iPhone with two computers (or manually manage an iPhone from more than one) it can be achieved if all computers have copies of the self same library. See Re: how do i sync on a second laptop without the data on my iPhone 5 being erased?

    If in iPod that means the music files got corrupted and are lost.

    Follow these steps to resolve the issue:
    1. Verify that airplane mode is off by tapping Settings > Airplane Mode.
    2. Reset the network settings by tapping Settings > General > Reset > Reset Network Settings.
    Note: This will reset all network settings, including Bluetooth pairing records, Wi-Fi passwords, VPN, and APN settings
    3. Ensure that your device is using the latest software. To do so, connect your device to your computer and check for updates in iTunes.
    4. If your issue is still unresolved, perform a software restore in iTunes.

    My standard list of things to do first for these wierd sort of problems, but I also tend to run these before I go to burn an iDVD project just to be safe. Keep in mind this list represents the programs I tend to use. There are several alternate programs that do the same things with some combining the functions of some of the ones below. So everyone has their favorites, but here are mine...
    Run MacJanitor (free download) to do all the Unix Cron Maintenance scripts.
    Run Disk Utility (Applications -> Utilities) and repair disk permissions on your start up drive (typically your internal drive). Also verify any other drives mounted on the system, especially any external drives that you use for iMovie and iDVD projects.
    Run Preferential Treatment (free download) to check for corrupt/damaged application and system preference files.
    Run Cache Out X (free download) to clear all system and application caches.
    Reboot your Mac (after running Cache Out X you are given the option to restart the machine).
    My guess is that after running Cache Out X and restarting you might find your hard drive space back again. If not, you might try booting off your restore/install CD or DVD that came with your system and then trying to delete that log file, then rebooting with your hard drive again.

    You can't copy directly from one iPod to another, the songs have to be transferred to iTunes first and your second iPod is updated from there.     The transfer of content from other sources such as songs imported from CD is designed by default to be one way from iTunes to iPod.
