Can't remove apps from my 5s when its plugged into itunes

So I did try to search before so that this wouldn't be a duplicate. I know how to close open apps. Thats not the question. I have a ton of apps. And now I'm cleaning up my phone and want to take apps off my phone that I no longer use. Except I can't do it on this phone. I switched from my 4 about two weeks ago. Since the "x" didn't pop up on apps anymore, I knew that I could connect my phone to ituens and in the iphone screen remove/install apps as I pleased then sync to apply changes.
When I try to do that on this phone, it shows the install button for all the apps that I don't have on my phone. But for all the one currently installed the "remove" button is grayed out. I can't click it. Holding the apps on my phone makes them jiggle, but there is no "x" to remove them.
Anyone have any ideas whats going on?

    Sorry, not sure what you mean by remotely?
    You can remove apps from your phone without being connected to anything if you have the phone in hand. Were you speaking about something else?
    If not, then you just press on an app on the Home screen and hold it down until they all begin to wiggle. Apps that you can remove (non-Apple apps) have a little "x" in the top left-hand corner. Tap on that, and the app will be removed.

    It works just the same as an iPhone. A long hold on an icon will cause them all to start wobbling, drag to move around or tap the X to remove.You can't remove any of the built-in apps so these won't get an X to tap.

    I am still seeing the option Image Capture, like shown in the screenshot that Rysz posted.   But it is another example of the hide-and-seek Apple likes to play with us.
    The option has to be set for each device individually. With the device connected to USB, you have to click the tiny disclosure triangle in the lower left corner of the sidebar to reveal the option.
    I was perfectly happy with the program I paid for (Aperture), and now to maintain the functionality I have to pay for another application (LightRoom) to get the functionality that I paid for in Aperture.
    Aperture 3.6 is working well with Yosemite. I will use it, as long as I have a Mac, that will run Yosemite or a compatible system.
    Have you looked at Capture One?  It looks much more similar to Aperture than Lightroom.

    Have you tried deleting the songs from Settings?
    Settings -> General -> Usage -> Manage Storage (not the iCloud link!) -> Music and then click Edit to enable you to be able to delete.

    Pluged into itunes and it gave me the restore screen. restored again.  Now when i plug into itunes it shows my phone but freezes up. I need to use task master to close itunes. Went to apple store tech. No help  said to use Icloud but no WiFi is available.  My wife's phone works fine with itunes.

    Basic troubleshooting steps clearly outlined in the User Guide are restart, reset, restore from backup, restore as new device.
    If you have gone through ALL the above steps and are still having problems, then you'll need to bring your phone into Apple for evaluation.

    The apps are not actually in your iCloud storage, they are links to the apps in the App Store. What you are seeing is your purchase history and as such cannot be deleted.
    You can however hide your purchases, which you can do from the QuickLinks > Purchased option from the main page in the iTunes Store on your computer.

    Yes, but you should not rely on that, and they are not viewable.  They are only for restoring your iphone.
    You should be importing all pics taken with the iphone to your computer regularly as you would with any digital camera.

    You can hide them in your purchase history. You can not delete them. The purchase history is a permanent record of what you've purchased.

    I no longer work for the company and deleted most of the apps from my iPhone.  HOWEVER, there is an app left that I cannot delete (no x appears in the corner of the icon like it does for almost all the rest of the Apps.)  The app is called: 
    Apps@Work
    Is there any way to delete this other than to totally wipe out the iPhone and reinstall everything (and have to reposition all of the apps back the way I like them, etc....?)

    Thanks, guys!  That worked!
    However, it was not totally straightforward, so I will add some comments here for others who might try:
    I can go to Settings>General>Profiles and see a LOT of profiles.  There are two categories:
    Profiles and
    Provisioning Profiles
    I was able to delete over a dozen of the Provisioning Profiles (by selecting each, then selecting delete within each).
    However, I couldn't immediately figure out how to delete the remaining dozen or so Profiles.  I had to open each of them - it turned out most I could not delete, but I found one that DID have a delete option inside, and when I deleted that one, the rest disappeared also.  I suspect if I had stumbled on that first, it might have also deleted the dozen "provisioning profiles" for me?
