Quicktime saves the audio files as ".mov" by default and NOT as MP3. You'll likely need to "convert" them in iTunes before using them in other devices.
Before I got professional audio editing software, I used QT for recording analog to digital, and theat way how I did it.
These days I use WireTap Studio from Ambrosia to record, and Audition from Adobe to do my final edits, but I'm doing them for clients, and it was a necessary investment. For personal use, you may not be able to justify the expense unless you're talking about a LOT of cassettes to convert.

    The Apple article listed above is a little misleading for some computers depending on model.  The cable required has a miniature TRS (tip-ring-sleeve, just like an iPod headphone) on one end, and splits into two "phono" (RCA) plugs at the other (the one that's Red or a Red Ring is Right channel).  You plug the TRS into the MacBook Pro's audio input; it won't go "all the way in"...some have SEPARATE headphone out jack and a combo digital/analog input jack labeled with a circle and two triangles pointing inward. 
    The best audio quality is if you can plug the RCA plugs directly into the output of the cassette deck (or MD player), then crank up the output level of the cassette or MiniDisc (if it has an output level control) until it's almost at the maximum on the meter on the loudest musical passages. 
    If you're going through your stereo receiver, its TAPE MONITOR buttons may be turning off the output going to your Mac.

    Just tried this again.  I may be missing something with the options in the dialog box which states the following defaults:
    Format: ZIP
    Method: Normal
    Exclude Mac Resource forks (selected) - don't understand what that means?
    Delete files after compression - not selected.
    At the foot of the dialog box it states "Drag files to RarGenie in the dock"!  Not sure what that means either.
    Please don't spend any more time on this if you don't have an easy answer.  I was really hoping to hear from someone who had used an available App in the App Store which they had found easy to use and not too expensive and which could be used with an appropriate hardware device.

    In my case, I have a Sony Digital8 camcorder which will play back older analog 8mm and Hi8 tapes, digitize them on the fly and send them to the Mac via the firewire cable.
    Also many other digital camcorders feature a "pass thru" mode which will allow you to hook an older analog camcorder or VCR into the digital camcorder which then hooks to the Mac via Firewire. You play the old analog footage and the digital camcorder acts as a analog-to-digital converter and bridge.
    So if you dont already have a digital camcorder, these are two types you might look into which will give you the ability to digitize those old tapes and upgrade to a new digital model.
    Otherwise, there are various converters on the market, but of course they are not camcorders, so you would still have to use your old analog camcorder and then convert with the device.

    Use the MBP's audio input port, and if your MBP is the 13" version the following Support article applies: MacBook and MacBook Pro (13-inch): How to use the combination audio port for an audio input device
    You can use QuickTime Player and select "New Audio Recording" from its File menu.

    Not something I've ever done, but I found a 9-year-old article from MacWorld -> http://www.macworld.com/article/1041790/tapetocd.html - that explains it a bit. Apparently the only software that you need is GarageBand and a hardware interface. Just Google "copy audio cassette to mac" and you'll get tons of hits.

    I just tried using the IMic and my Walkman, unfortunately as the Walkman has one socket for earphones and the other socket is for a 3.5v mains plug. I am not sure if there is anything I can do.  I do have a conventional cassette recorder/player but it needs to be connected to an amplifier.  That is all very well, however, I am concerned about connecting the amplifier to the mac mini.  Before I do, is there any special adapter leads that I need to use, I am a little naive on this matter.

    At what point is the video quality bad?  Is it bad on capture?  I would recommend using an s-video 1394 firewire converter instead.  They capture the video at a higher bit rate.  If you have a lot of 8mm tapes to capture, invest in a stand alone DVD recorder.  They capture and compress in one shot.  If you need to rip it back from the DVD into iMovie again, I would recommend using DVDxDV.

    I bought an ION Audio Tape2PC USB Cassette Deck to do just what you want to do.  Although the name has PC in it (shudder), it comes with Mac drivers and works as advertised. It copies the files into iTunes.  You have to manually add the song title, artist, and other information, including the cover art, but it does get the songs into iTunes.

    Yes, the audio input on your MacMini is stereo and line level. (It is not a Mic input.) You need a stereo miniature phono plug (3.5 mm) on the end that goes into the MacMini. You do not need a pre-amp.

    Hello, I just acquired boxes and boxes of old records (as with one box of old music cassettes) that were my dad's, and would like to convert them to digital files.
    Can anyone please give me some recommendations of what record/cassette players are available to be connected to a Mac, that you have found to be good, that work well and transfer very good quality analog music to digital files?
    Are all means to do so via USB, as I seem to have found? Wouldn't firewire be better? And do any exist that transfer via firewire instead of USB?
    As my info says, my computer is my trusty ol' eMac G4, but am upgrading (finally) to the current latest iMac by the end of the year (hopefully), if that will make any difference in any product's compatibility.

    I can't tell you all the other possibilities, just how I did it and maybe what you could do that is similar. It looks like that computer has sound-in capabilities with microphone jacks. You can connect the output of a cassette player to the sound input of the computer and then use a recording program (e.g., Audacity, Amadeus Pro, maybe Garageband (never seen a copy so I don't know what it can do), etc.) to record the sound. Yes, there are USB (and maybe Firewire devices) that can do the same but that's added cost. When I did this originally I had a sound card on my G3 that took direct RCA input. I haven't done this in a while but I bought a used Dazzle USB video converter for $2 at a garage sale. I know it doesn't have the video support for Mac but the next time I'm up for this I know when I plugged it in as a test the Mac recognized it as an audio input device so maybe it will work for that. If you're going this route I suspect a USB2 device will suffice. After all, you're getting this from old tapes and records and 24bit 48k recording probably isn't worth it.
    If your output is a stereo cassette deck you can get an adapter to convert from the RCA to the minijack style plug. If your output is from a turntable you will have to run it through a pre-amplifier to get line level output. There are also turntables with USB output directly made specifically for people wanting to do what you want to do. Read the reviews. This was more than I wanted to spend and I also recall seeing some issues (lack of Mac support is common) in a quick read of a review.
    You'll probably end up recording a side at a time. This will result in large files and you will need to split up the tracks using the audio editor. I compressed mine with FLAC for archiving and made high-quality mp3s for daily use.
    Amadeus had noise filtering capabilities. Spin Doctor has this. Other much more expensive programs too. I tried SD and wasn't satisfied with the results so I hand edited the cracks and pops from my records with interpolation in an audio program. Took a long time but it didn't filter any part of the signal except the part I wanted.
