Changing contact classifications

I have Outlook 2007 on Windows 7, an iPhone 3GS and an iPad.
Up until a couple of weeks ago, I had MobileMe which kept all of my devices synced, but now our company has moved to Exchange. I have changed over my calendar and contacts to sync with Exchange.
I have two questions relating to my contacts.
First, some of my contacts show the country and others don't, but I don't see any difference in the setup between the ones that do show it and the ones that don't on any of my devices. I don't have any international contacts, so I would rather it not to show.
Second, some of my contacts (for example, ones that I created from the maps app) had the name of the company in both the first name field and the company name field and their picture was a picture of the pin from the maps app. After the transition to Exchange, I have been going in and cleaning up some of these issues, and when I clear the first name field and get rid of the picture, the contact shows a head icon rather than the buildings icon that appears for companies that don't have pictures. Under MobileMe, I was able to go into the contact and check the box saying the contact was a company and the devices would correct themselves. I don't see this type of a checkbox or classification on the iPhone, iPad, or in Outlook. Am I missing it somewhere?

I could be wrong, but I've always found that Address Book on my Mac was like the Master Repository of the data. I would rarely add a contact on my iPhone (and by extension, my iPad). If I did, I would clean it up in Address Book.
Last year, when I convinced my company to allow me to use my iPhone on Exchange, upon my first sync, I would guess that about 10% of my contacts were messed up. I'm not sure why, but I cleaned them up in Entourage (Outlook, kind of sort of, for Office for Mac).
Honestly, I couldn't figure out the logic of what cause certain contacts to mess up and those that did not. I had the same issue with countries, which is important to me, since I do international business. Some synced perfectly. Some wouldn't sync at all. And some defaulted to "USA". The best I could determine was that older contacts seem to have more problems (I have contacts that go back to 1992, and have been synced through multiple programs including Outlook, Palm, iSync, etc. etc., though I've stayed with Address Book for the past seven years or so. I'll bet some random bit of code just got transferred from one program to another.
