I think if you google "ipod without itunes" or "iphone without itunes" you'll get plenty of hits with interesting suggestions.

Just because you use iTunes doesn't mean you have to buy every song from Apple's store. You can import your existing CDs or MP3s into iTunes without buying them again. You can use iTunes to manage your existing collection of music, and not buy any new music. (The vast majority of my music collection was ripped from CDs, not purchased from Apple's store.) Also iTunes has wonderful integration with free sources of audio content including podcasts, iTunes U, etc.
In my opinion, the main reason to get an iPod or iPhone is for the seamless integration with iTunes. If you decide you don't want to use iTunes, you probably are dealing with slightly more cumbersome music integration which is probably no better or no worse than any of the other MP3 players out there.
Reading between the lines of your original post, if you're concerned about getting locked into Apple's proprietary world when managing your music in iTunes, you consider using an industry standard format, like MP3, rather than Apple's proprietary file formats, such as AAC. Specifically, in iTunes, go to preferences, go to the "When you insert CD section", click on "Import Settings", and change from AAC to something like MP3. Not as efficient way of storing the music, but you're also not locked into Apple's file formats (and thus just Apple hardware/software). But if you expect to stay with iPods and similar Apple players, AAC is a fine format. But for those of us who play music on other players too (e.g. my TiVo), MP3 is a more flexible format.

There are several ways you can pull the music off your iPod and onto iTunes. The first link below provides step-by-step instructions for the direct method if you have a PC as well as a few third party applications (for both the Mac and PC) if you choose to go that route instead. You can also do a simple Google search for "copy music from iPod to computer" and you should receive a number of sites that can help you out.
Just make sure that when you have your iPod plugged into your computer, that you don't hit "Erase and Sync" before completing the task of copying your music over.
Also, if you have any purchased music, you will probably have to re-authorize your computer by heading to the Store drop down menu and choosing "Authorize computer."

Syncing shouldn't trouch you photos unless you have photos in a Photo Library album. These would be photos that were synced to your phone from your computer. If you do have any, you'll need to use an app like PhotoSync to transfer them to your computer prior to syncing.
If you prefer to backup your camera roll photos prior to syncing, open iTunes and go to Preferences>Devices and check "Prevent...from syncing automatically". Then connect your phone to your computer and import them as explained here: http://support.apple.com/kb/HT4083.
Then, to minimize data loss, follow the steps in this user tip: https://discussions.apple.com/docs/DOC-3141. To follow the steps, first open iTunes and go to View>Show Sidebar. Also, Transfer Purchases is now located in File>Devices.

If you have any iTMS purchases the transfer of purchased content from the iPod to authorised computers was introduced with iTunes 7. A paragraph on it has been added to this article: Transfer iTunes Store purchases using iPod
The transfer of non iTMS content such as songs imported from CD is designed by default to be one way from iTunes to iPod. However there is a manual method of accessing the iPod's hard drive and copying songs back to iTunes on Windows. Saving songs on iPod without syncing w/ iTunes

I have songs that I want to keep on the iPod that are not in the iTunes.
I had the iPod set for syncing, but now I don't want it to sync.
How do I set the iPod for manual mode without losing the songs that will be lost when I hook up the iPod?
The syncing happens too fast to make the changes before any loss.

Hold the keys down and then connect the iPod. iTunes will open and you'll see the iPod icon in the source list, give it half a minute if you are really worried and you can let go. Another thing you can do is connect to a different computer. You will get a message that your iPod is linked to a different library and asking if you want to link to this one and replace all your songs etc, press "Cancel". Pressing "Erase and Sync" will irretrievably remove all songs from your iPod. Your iPod should appear in the iTunes source list from where you can change the update setting to manual and use your iPod without the risk of accidentally erasing it. Itunes not copying songs to Ipod

I had to reinstall itunes a few weeks ago, since then I've been unable to copy songs from itunes, it recognises my ipod but can't move any songs to it.
I've tried resetting everyting, reinstalling everything, nothing works.
Anybody knows how to fix this?

Are you sure that your preferences are at the correct setting?
Go to "Edit -> Preferences -> iPod -> Music".
On either of the "automatic" settings, iTunes should automatically update the songs from either the library or a playlist (depends on the setting) to your iPod.
On the "manual" option, you'll have to manually transfer songs to your iPod, by simply going to the iTunes library, selecting the songs you want on your iPod, and drag-and-drop them over into your iPod's name in the left source area of iTunes.
If you still can't transfer sogns from iTunes to your iPod, then try a restore on your iPod.
