Delinquint daughter deleted her "kik" application from her ipod while locked in the bathroom....really would like to see if I can get that info back! Clearly not an innocent act...

Kik now requires iOS 4.3 or later.
Your only way is if you have the version that was compatible on your computer such as in the recycle bin/trash or in a computer file backup. In that case delete the current version that is in your iTunes App library and replace it with the older version. Then sync.

You can hide the iTunes store app on her iPod via Settings > General > Restrictions > iTunes 'off' - that will remove the app and therefore stop hre buying things from it.

WWhat are you syncing your contacts with? A supported application on the computer or cloud service? They should still be there.

There may well be others of better value. Google is your friend.
You'll probably need to do something with the data you can extract, like add it to Outlook, rather than being able to send it directly to the driod.

If your daughter owns a 5G Nano (the one with the camera built-in) and she deleted her recorded videos, I'm afraid you are out of luck. There is a small chance that some expensive data recovery solutions can recover some of that, but again the chances are slim.

To help prevent the last backup from being overwritten and thus erasing the Messages from the last backup turn off autosyncing so that you have to overtly start a sync. To turn off go iTunes>Preferences>Devices and check the box that says "Prevent iPods...".

Select the app by pressing and holding down on its icon, when the icons start bouncing press the little X at the top left of the icon. Select Delete to remove the app. Press the home button to go back to a normal display screen.

Did this back along to mine. Plug it into itunes on your pc (or Mac) and click on the ipod icon on the left hand side. When the device options come up on the main screen, click on restore. Follow the steps and it should restore to factory settings. If you had icloud activated on the ipod all previous purchases should be in the cloud and ready to download onto the ipod afte rit has been restored to factory settings, otherwise you'll have to download them all again. You'll get back the memory used by the App itself, but more than likely not the App's data.
