Direction of Sync?? What Overwrites What?

Sorry for the newbi question. I searched for an answer but didn't find it.
Each time I go to sync my phone (for the first time) I get a warning that "Syncing with this phone will change more than 5% of your contacts on this computer". In that the individual in the AT&T store loaded my contacts from my old phone incorrectly (switching mobile #s with home #s, etc) I'm afraid that the iPhone will overwrite my Outlook (2007) dB.
How do I control this? What will overwrite what? I want to have a one-way sync for now from Outlook to the phone.

If there is nothing you want to keep on the phone(sms messages, contacts, calendar, music, etc.) then restore the phone on your computer and set it up as a new phone. Then sync your contacts from your computer to your phone. This will ensure that what's on your phone mirrors what's on your computer.
