The Apple slogan for users switching from a PC to the Mac Mini is 'Bring your own display, mouse and keyboard'.
So 'any' keyboard should work.
However, not all keyboards have the same layout and you will e.g. not see an Apple key on a PC keyboard (though functionally it is the control key).
So I would suggest : try before you buy.

I'm sprucing up my MacPro 2 x 2.66 GHz (hard drives, video card, & RAM) and would like to know if I have to use Apple's RAM with the heatsink on it.

You MUST use RAM with both the large Apple-specified Heatsink AND the Apple approved Temperature Sensor. These are "tuned" to the airflow inside a Mac Pro. Modules must also be ECC modules, 72 data bits wide.
If you decide not to, the internal fans may not work properly, the modules will get too hot and will fail prematurely
The best way to solve this pronlem is to deal with a Vendor that knows Macs and can tell YOU which modules work in your Mac -- guaranteed or your money back if it does not work for any reason. And a lifetime warranty -- if it ever fails and still has their sticker on it, they will replace it, free.
There are a few one-off deals out there that may be a little cheaper, but the cost of dealing with reputable Mac-oriented Vendors does not add substantially to the price. And you do not get stuck with "you buy it, you own it" modules that do not work in your Mac.

I have always used the apple TV remote for my presentations. I bought a retina display last year for the betterment of my presentations and now I have to stand near my computer and hit a button to change my slides where as before I used my remote. My best guess is that either there's a small deformation of the USB plug of your keyboard or some foreign matter (like lint) inside the keyboard plug. When I was setting up my new lab last year I had to use the extension cables and I found that the female end of the extension cable was considerably tighter than the computer's USB port. If an Apple store is nearby it would be worth taking the computer, keyboard, and extension just for piece of mind.

People report it is still possible to use a wired USB keyboard with the CCK, if you use a powered USB hub to get around the "not enough power" error message. (I have done this with an older Apple USB keyboard my non-jailbroken iPad1 on iOS 4.3.3.) Normally, powered USB hubs have a AC power adapter so you lose portability unless you can find a battery powered USB hub. At this point, the (in)convinience of the USB hub becomes an issue, depending on what you get.
And wired USB keyboard were never supported for the iPad. So there's no guarantee that it will continue to work with future iPad updates from Apple. So best to go with a Bluetooth keyboard unless you have a specific USB keyboard that you "must" use. If you have all the equipment already, I say give it a try. But I would not recommend trying a USB keyboard if you have to purchase anything.

You can do it through iTunes as well.

Went to Settings where?
If you want to use your exisiting Apple ID on your iPad, you need to:
1. Go to Settings>iTunes & App Store and sign out the new ID, and then sign on the old one
2. Go to Settings>iCloud, scroll to the bottom and delete the iCloud account, and the sign back onto iCloud using the old ID
You still have not indindated why you are saying that using your old ID originally "didn't work". What do you mean by that? Did you get some sort of error when you tried to sign on with your exisiting Apple ID?
