Doe's the restore procedure from itune will return all my data and app ?

Every day i backup my iphone4 via itune.
If in the future the iphone will lost or get damage (i hope not) and i will buy a new  one, my question is:
after restoring via itune,will i get the same app, the same data (i am writing a personal diary) the same contacts,SMS,MAIL SETUP etc...... ?
I do not care from photoes and video because i save them to my computer.
During the two years i bought app from the app store and i have downloaded alot of free apps.
I have also delete alot of apps.
That is why i am asking this question.
If there will be an app that doing an image (like in pc) and i will get the same data it will be great.
I will be very happy if some one can help me with my question.
