That is expected. Serial numbers are platform specific. You need to get CS6 and make the platform switch.

You can either use Office for Mac 2011 or use Boot Camp to run Windows or use a VM, such as Parallels Desktop to run Windows. Running Windows, you'd be able to use MS Office for Windows.

Move the content from the old computer to the new computer.
Sync the iPhone via cable to the new computer and enable Wi-Fi syncing.
It should now be possible to sync via Wi-Fi to the new computer.

The only real reason you might need to install Office 2007 on your Mac is if you need Microsoft Access, and don't want to go through Filemaker Pro for Windows to migrate Access to Filemaker Pro. Once in Filemaker Pro format, it can be put on Filemaker Pro for the Mac. Numerous applications for download and online offer free to nearly free access to Microsoft Word, Excel and Powerpoint documents, including LibreOffice, OpenOffice, Neo Office, Google Docs, and Zoho Docs. This would be much cheaper than installing a database on your Mac and PC, if Access is not part of the equation.

I had an old PowerMac that had the Leopard software and I was able to drag those songs to my iPhone. I can't find that option. iCloud only has content purchased (or free) from iTunes. Ripped music or music from other sources is only on your computer. As the iPhone can only sync with one computer at a time you should copy the iTunes folder from the old computer to the new one. It's in the Music folder on the old one, just copy the entire folder to the Music on the new computer. When you first sync your iPhone content will be replaced by the content of the new computer.
You can optionally enable iTunes Match. This searches the non-iTunes content in iTunes or on your iPhone and finds the original digital version on the Internet if it exists. This then becomes your backup. If you have music that it cannot find it will upload it to your cloud storage, but you may have to pay for the storage if it is over 5 GB total (along with your backup). iTunes content and Match content are not included in the 5 GB free limit.
Usually to fix mail issues just delete the account, reset (reboot) the phone by holding HOME and SLEEP until an Apple logo appears, and adding the email account(s) back.

the photo elements I have is for windows XP. now I have a different computer, and that has windows 7. I put the adobe photoshop elements on it not realizing it was only for windows XP. and of course it doesn't work. I don't know how the upgrade works can I upgrade the windows XP photoshop to windows 7 photoshop?? or do i have to get a new one for windows 7.?? I just downloaded the latest version of iTunes for Windows and now iTunes crashes everytime I launch it. I have tried re-downloading and selecting Repair with no luck. Any suggestions?

For general advice see Troubleshooting issues with iTunes for Windows updates.
The steps in the second box are a guide to removing everything related to iTunes and then rebuilding it which is often a good starting point unless the symptoms indicate a more specific approach. Review the other boxes and the list of support documents further down page in case one of them applies.
Your library should be unaffected by these steps but there is backup and recovery advice elsewhere in the user tip.
If you've already tried a complete uninstall and reinstall try opening iTunes in safe mode (hold down CTRL+SHIFT as you start iTunes) then going to Edit > Preferences > Store and turning off Show iTunes in the Cloud purchases. You may find iTunes will now start normally.
