Email functions jacked-up upon activating iPhone 4 and updating to 4.0.1

While I was activating my iPhone 4, I was asked if I wanted to update to 4.0.1. I clicked "yes" and proceeded. Unfortunately, everyone else had the same idea and the download froze, and I had to restart the computer to get rid of the "spinning rainbow pinwheel of death". When Mac restarted, the download supposedly picked up where is left off and everything was "hunky-dory", or at least I thought it was. My email has been acting wacky ever since. I spent 12 hours yesterday trying to hash this out with the Apple Store and AppleCare to find a solution. They said that the phone probably needed to be replaced. I also went to AT&T today and had them replace the SIM card but no such luck in fixing the problem. So now, I would like to make one last ditch effort to fix this myself before sending the phone back. Is there any way to reload the original 4.0 and then update or just reload the 4.0.1 again. I think that it was corrupted due to the interruption in the download process.

I use IMAP on all of my email accounts so whenever they start acting up I delete them and re-create. That has always gotten rid of any sporadic problems I've had. YMMV.
