Fill bucket- too much fill

Question

when i select an area with whichever selection tool (in this case i used the magic wand), then i proceed to use the fill bucket to fill the selected area with a different color, the area becomes filled with the new color, however it also some extra pixels to the image. now i realize it may not actually be adding pixels, it may just be filling the softer and less saturated pixels with a hard color, but how do i stop this either way?
for example, i rasterized the number "8" making it from a font to a workable layer that i can use brush and erase tools... 8 is a very round image/number, so there are many softer greys and nearly white pixels on the rounded edges to make them seem more rounded, even though the fill color is black. when i select the image of the number 8, and fill it with red, it has more of a pixelated and less rouned shape and therefore is not nearly as pleasing or professional looking. how do i keep the softer edges and still fill the image with a different color?

Using a text layer, with a 8, as an example,
you could Command+click on the text layer
thumbnail.
Then make a new layer.
Then Edit>Fill.
