If you want to copy the music back from your iPod then File > Devices > Transfer Purchases should copy your iTunes purchased music back from it. Syncing is one way street, computer to iPhone. You have to use 3rd party tool to transfer music not from iTunes Store to the computer.

You should be able to copy iTunes purchases to your computer's iTunes via File > Transfer Purchases. For music that you've bought from other sources or copied from your own CDs then have you not got a backup of them on, for example, an external drive that you can copy onto the computer ? Another way is to open your Time Machine back up or clone (if you have one) and copy the App Store app from the /Applications to your Macintosh HD's /Application folder.
Right click on the Time Machine icon in the Menu Bar.
Select Enter Time Machine; then navigate to a date you know it was still there and copy if from the /Applications folder.

First, is your iTunes account on your computer, the account you set up your iPad with and the one you sync regularly with? If yes, just reconnect your iPad to your computer, via USB and open iTunes. After your iPad syncs, and you see the message that it's OK to disconnect, don't disconnect. Click once on the iPad from the left side of your iTunes screen. This will open your iPad in iTunes. You would then click on Videos and you'll see the TV shows you downloaded. You can choose individual shows, or choose to sync all videos to your iPad. After you've moved what you wanted back, click apply, then sync again and you should be fine.

in order to restore your songs and apps, you should just reconnect to itunes and sync your data. your phone ran a backup before it upgraded, and you can also do a restore. but the key is still to go to your itunes and sync back to your phone what you wanted there in the first place.
