My question is pretty well explanatory. Can I, with help from iBook software, produce a book to offer in the traditional way to literary agents. Don't have iPad. Certainly can't afford one.

Sounds like a dead end (iBA specifically targets iBook on iPad with a hybrid epub), unless you can find an aggregator willing to rework your content into at least regulation epub format.
Use Pages, instead. Then you can output something that the agents can at least handle for printing and general epub distribution.
