Have paired my iPhone 5 via Bluetooth to my 2013 Honda Civic Hatch but can't upload my addressbook. Seems to be a problem with the lack of an Object Push Profile (OPP). Anyone have any solutions to this problem?
The iPhone does NOT support a bluetooth connection to a computer except for the sole purpose of tethering the internet connection

for the devices to find each other via Bluetooth you would need to turn on the iPhones cellular hotspot and then let them search for each other. As far as I have found this Bluetooth connection is only for connecting the iPad to internet via iPhones data plan.
To transfer photos you could setup a new photo stream and put the photos you want transferred in it. When it syncs to the iPad you can save directly to the camera roll and delete the photo stream. You may also be able to delete the photos old photos and re-add them to photo stream so it looks like they are new to the iPad. -

Are you making sure you are in park before attempting the sync? The car won't allow you to do it in motion, whether or not you're the passenger. -

The only thing you can connect an iPhone to your Macbook over BT for would be tethering, which would be done through the Personal Hotspot settings on the iPhone, not the BT settings. iOS doesn't support the BT profiles for trasferring files.

Typically these are added toy our iPhone by synching with iTunes and that is the only way to "unsych" them.
In your Itunes tab for photos you can uncheck the albums you do not wanted synced to your iPhone. Then resynch your computer and your iPhone and they will not be added to your iPhone.
