HELP!: Suggestions need on how to BU/sync 2 phones

Hi... I'm in dutch cause my wife lost her contacts on her phone and I had not been Backing the phone up... Whoopsie!
I have iTunes 09 on Leopard and 2 user accounts one for my wife and one for me. Each user account has its own Address Book for contacts. I have always used iTunes through my user account. I don't think iTunes even shows in the dock of her account. What is the best way to set this up so both phones acn be backed up without mixing our contact data?
Does the iTunes BU function BU Contacts and Photos from her camera roll or does that data ahve to be specifically Backed up to iPhoto and address in a seperate step?
Can both phones be backed up on the iTunes in my user account and still preserve the contact/photo data on each iPhone?

If iTunes is not available in the Dock with your wife's login account, select and drag the iTunes application from the Applications folder to the Dock and release to create an alias for the application in the Dock. This can be done with any application you want available in the Dock.
Although contacts are included with the iPhone's backup along with photos and/or video in the iPhone's Camera Roll which is updated as the first step during the iTunes sync process, contacts are designed to be synced with a supported application, and photos/video in the Camera Roll should be imported by your computer as with any other digital camera. The import of photos and/or video from the iPhone's Camera Roll is a completely separate process from the iTunes sync process.
If you sync two iPhones with the Address Book under the same computer login account, contacts on each iPhone will be the same.
