Hi I had to disable my ipod because i forgot the password?
I had to disable my ipod touch because i forgot the password. Now itunes does not recognize the device when i connect to itunes?
the only thing on my head you could do is backup your iPod while its on showing the lock screen plugged into iTunes, then restore it from the backup and later once it's up, it should ask you to add a passcode in.

If you restore from iCloud backup the apps will be automatically downloaded. If you restore from iTunes backup the apps and music have to be in the iTunes library since synced media like apps and music are not included in the backup of the iOS device that iTunes makes.

Your password was sent to your emergency email address. Perhaps you have an email you never use? I use the free email from my cable TV account as my emergency email.
Your Apple account and cloud account are separate. You could even have completely different user and password. Most of us use the same user ID and password, but they are not the same thing, don't mix them up.
If you can't retrieve emergency email, you will have to call apple support.

Yes, you can just log out of iCloud on the mini (Settings>iCloud> Sign out) and nothing will be affected as long as the iPad is not restored from any backup after that. Though if you're giving her the iPad I would highly recommend moving the pictures to your iPad (via this page) so that the mini can be reset and set up under your daughters ID to avoid Activation Lock in the future.
